Vegetables in pasta and juice

This week’s favorites included lunches like this and juices like that.

All I wanted was vegetables.  As many as I could fit into each meal.

I made a huge vat of pasta with veggies, hemp seeds, and balsamic dressing which lasted a few days.  I added avo and greens to my serving a few days to make it seem new but really it was so good I could have eaten it far more days than it lasted.  I don’t think they make bigger tupperware, but if they do I should track it down so I could make this pasta salad even bigger.

As for the juices…

I got a shipment from Urban Remedy the day I arrived home from vacation – talk about perfect timing – and I couldn’t have been more eager to dig in.

I’d never heard of the company before but they are fairly local to me (based in San Rafael with a store in Mill Valley too) and they deliver all over the US!  You can read all about their story here but they use 100% organic produce sourced directly from farms, and they are true to their mission that food should be healing.  The “After Party” with carrot, apple, beet, ginger, and lemon is easily my favorite.  I can’t tell you how fresh it tasted with perfectly balanced flavor.  It was exactly how I try to make my own juices.  I wish I had their formula because it’s perfect.  The “Glow” was the other one I tried this week and it was pretty green.  I have never tried things like algae in my juices, so it was kinda cool.  Urban Remedy actually has a few unique things that set it apart from other cold pressed juices, including E3 live (a bluegreen algae), dandelion greens, and burdock root.   Plus they have FOOD!

I was planning on have a few bites of this brownie, as a “snack”, but it was so good I ate the whole thing.  Oops!

It’s not a small brownie at all, but it didn’t leave me feeling full or heavy or anything.  Paired with all the veggies I was pounding, I felt just as good after eating this as before!  I’ll take a box of them!  Seriously delish.

Anyway, I have a few more of their products to try, but so far I can’t recommend them enough so definitely check them out if you’re interested in delicious healthy juices.  They have vegan, gluten free and raw options aplenty.

In spite of all the healthy fare, it seems I’m still in a bit of denial about vacation ending because I took down the better portion of a pineapple this week too.  As a snack, not a pina colada.  😉

    I wouldn’t ever say I crave vegetables, but I like them. With my last pregnancy (kid now three weeks), I developed this horrible aversion to vegetables and fruit too really. I’m having a hard time getting back into veggies. So I wonder, what do you think makes you crave veggies? Is it the way they are cooked? The sauces, marinades, spices, etc?

    i think its just being without them for a while that makes me miss them? maybe? i don’t know. i don’t crave all veggies but i definitely look forward to massive salads as meals. sorry i don’t have a more helpful answer.
