Vegetarian snack ideas

Now that Kyle’s bringing his lunch to work – and he’s vegetarian – I’ve been trying to get creative with snack ideas.

While I’m content eating the same things day after day, he’s not.

Guess what he’s finally sick of?  Clif bars.  I never ever thought the day would come (check out the photo below for a reminder of his love affair).

That goes for all kinds of bars.  So I’ve been brainstorming things that are healthy, nutritious, tasty and interesting.  And I decided to start a master list.  I’m sure there are moms out there looking for lunch box ideas.  Packing the same thing day in and day out gets old for adults and kids alike.

In no particular order, here are some more ideas:

  • string cheese/cheese wedges
  • soy nuts/roasted edamame
  • dried fruit
  • fresh fruit (apples, bananas, & oranges are so dang portable)
  • yogurt (soy, almond, coconut, etc.)
  • home-made balls
  • hippie-roons
  • mini quiches
  • banana bread/muffins
  • nuts (honey roasted peanuts, dry roasted almonds, cashews, pistachios, etc.)
  • chips & salsa
  • crackers & hummus
  • cherry tomatoes & ranch dressing
  • pretzels & nut butter
  • veggies & tzatziki (carrots, cucumber, celery)
  • home-made granola
  • cookies
  • Ritz & peanut butter
  • celery & peanut butter & raisins (aka ants on a log)
  • popcorn/kettle corn
  • kale chips
  • apples & nut butter
  • crackers & cream cheese
  • home-made bars
  • tortilla wedges with cheese
  • pita triangles with hummus/nut butter
  • chocolate
  • Mary’s Gone twigs & dip
  • home-made trail mix (cereal, raisins, chocolate chips, nuts, etc.)
  • lettuce wraps (stuffed with hummus, pesto, veggies, etc.)
  • falafel
  • chocolate pudding
  • yogurt covered raisins/dried fruit
  • chocolate covered pretzels/nuts

    there needs to be a place to donate clif bars once you’re over them but still have massive quantities of them floating around in your cabinet… i’m with kyle on feeling “over” the cb’s. i’m now obsessed with bobo’s. specifically, the original flavor. so good.

    that being said, i do have one mangled clif bar that permanently lives in my shoulder bag because i am convinced that at some point in my new york life i will be on a subway train and somehow end up marooned in a tunnel for hours upon hours. should this happen, i will take out that deplorable peanut butter chocolate chip clif bar and nibble it slyly (because i will not want to share it with any of the other ravenous passengers). good plan.

    I am ALWAYS looking for new lunch/work snack ideas. Love the list thanks. And Tell Kyle I have a serious love affair with the Cliff Bar too. I try to eat cleaner these days so I’m not downing them like I use to, but I think I kept the company in business for a while. I had an ulcer a couple of years ago and couldn’t tolerate eating much of anything at any one time and lived on CB and gatorade for months.

    i would love to see the fights you get into over food after [x] hours of being stranded on a subway train…but what you should really store in your purse is kale chips. nobody is gonna want those. although depending on how old and mangled your clif bar is (and how bugged out bat shit crazy for food you are) maybe youll just be the psychotic girl they leave to herself. i can see that happening to you. it’d make a great blog post too.

    yes! they are my saviors…do you have a costco nearby? you can usually find them there.

    Oddly enough I am having the same dilemma with Seth. He was content with PB crackers for, oh, the past two years, but now he wants something different. I made a big batch of trail mix and divided it into small portions, and he seems to like that alright. I’ll do anything to keep him from resorting to beef jerky in the vending machine…

    Thanks for sharing this list! I’m constantly looking for new, creative snack and lunch ideas. I usually have to grab bites of food between meetings and auditions so having stuff on-hand is crucial. It’s cheaper and healthier than eating out all the time.
    The hummus singles and Justin’s PB/AB squeeze-packs save my butt on a regular basis. They’re portable, delicious, and I can pair them with just about anything!

    Tell your adorable kyle that if he microwaves the cliff for 20seconds amd smears it with PB the loe affair will be re-ignited… 😉 dates stuffed with a bit of nut butter and almond are great, but dark chocolate coffee beans will always be my 4pm weakness…
    ( and ha! To above comment- i have a mangled cliff in the bottom of at least three different handbags too for the same reason!!! Nyc subway stories have me prepared for anything!)

    ahhh…microwaved clifs are the BEST. i used to hoard the seasonal flavors (gingerbread especially) so i could have warm clifs all year long.
