White UN-cheese sauce

I’m gonna gloss over my AM eats because they weren’t too interesting.

If I were on Top Chef I’d call it a de-constructed smoothie, but I’m not, so for blog purposes it’s simply frozen nanner slices in a Blueberry Chobz.  Told you I like bananas Jess!

Lunch was a fantastic plate of yum.  On a bed of fancy shmancy lettuce and broccoli slaw, I added my WF baked tofu leftovers, baby carrots, and a few blobs of tofummus.

I was feelin’ the ‘fu BIG TIME.  Mmmm…

Perfectly protein packed.  I’m already on my second batch of TOFUMMUS.  Love.

Lunch dessert: medjool dates filled with raw macadamia nuts.

I was nervous about trying macadamia nuts (I’m still working on getting over my nut phobia, so this was the next step in my self-imposed program).  I haven’t had them since my dinner at Pure (the “cheese” sauce in the lasagna is macadamia based).  But given my obsession with dates, I figured this was the safest way to introduce them (I’m like a 5 year old).

They weren’t my favorite nuts, but I didn’t gag.  So I guess that could be considered a success?

I went to the gym later in the afternoon and happily danced my way through 8 miles (good playlists and several gym-less days tend to have that effect on me), followed by an ab workout and stretching.

I rehydrated with juicy honeydew, and then went grocery shopping for my very exciting dinner.

Thanks to amazing reader/email pal/commenter extraordinaire Courtney, I’ve had a recipe for white UN-CHEESE on stand-by for quite a while.  Literally, I have been wanting to make this recipe since she first sent it my way, so now that I finally have a functional kitchen appliance the magic bullet, it was definitely a high priority. 

This was my first experiment with nutritional yeast, and I gotta say, it was VERY cheesy :)  Consider this the first (of many) fan letters I will write:

Dear Nooch,

Thank you for providing a dairy-free alternative to cheese that I can add in bulk to my meals and not endure GI suffering for hours days following my feast.  I promise I will introduce you to every carb and vegetable in the apartment.

I’ll let Courtney reveal the recipe (if she chooses) in the comments section.  But keep in mind I increased the amount of tofu because I left out the agar flakes.  This made it a more sauce-like consistency, which was perfect for me.

After watching several hours of tennis, I was ready for something sweet.  Inspired by my Texas love, I had a bowl of frozen cherries for dessert.

    I have very real concern that you are going to turn into a soy bean. Please wait until November to do so.

    I have been intrigued by Nooch! So it REALLY tastes like cheese?.. Or like fake Kraft-style cheese?

    Not gagging on nuts is a good sign (TWSS). I’ve only had macademia nuts in cookies I think? Dude. You give me more ideas in one post than my brain can handle.

    Your un-cheese looks like a worthy creation! Does the whiteness of the un-cheese offset the orange tint that baby carrots give me? If so, sign me up for this faux cheese! Have a blasty with the PT! That reminds me, I should email you soon!

    Nice work on the cheese. I still havent tried the nooch. I am overwhelmed by all the stuff I wanna try and then I get to the store and forget half of it. Total brainfarts LOL.

    Anyway, the mac nuts in the medjools wouldnt be my choice. My choice would be stuffed with choc/carob/cocao nibs and/or PB or Sunbutter. That’s been my latest obsession.

    i loveeeeee nooch, i just made kale chips with nooch sauce on it tonight. i tried to replicate these amazing dehydrated kale chips i get at health food stores but are super expensive plus i dont have a dehydrator. i combine cashews, a red bell pepper, lemon juice, cayenne pepper and nooch and put on kale the way id make chips. i sprinkle with sesame seeds for fun and bake til crispy. theyre super delish i think. but you couldnt pay any of my friends or family to touch them! haha

    You really had not had nutritional yeast before?! I am honored that I was able to introduce the two of you–I am 100% obsessed with it. I confess–I am a nutritional yeast junkie. An addict. I admit it. OMG–the *best* salad topping ever? Hummus with nutritional yeast sprinkled on top (and then mixed in and sprinkled on top again)–try it. Thank me later 🙂
    Seriously–you can sprinkle it on just about anything and it will taste good. Maybe THAT will help me with the nut aversion?! I should just coat them in nutritional yeast…

    Anywhoo, about that Uncheese recipe…the one I sent you I had tweaked from a cookbook–Vegan Vitals (which I highly recommend and is an awesome cookbook). I am okay posting it as long as I give proper credit to the author etc., but are you okay with me posting it on the blog considering it is from a cookbook? Or would you rather people who want the recipe just e-mail me?

    I will have to send you nutritional yeast cheesy sauce recipes now…you don’t even need a blender for them!

    Three cheers for nutritional yeast! I can’t get enough of the stuff. Actually, we can’t get it here in Saudi Arabia so we have to special order it….in 25 pound shipments! So, when I say I’ve got a lot of nooch in my pantry, I mean I’ve got A LOT of nooch in my pantry! Lovely food and great blog!

    And frozen bananas are the best, looooove them in greek yog!
    But ok, so now I really need to try some nutritional yeast!! Everyone keeps raving about it!

    All those medjool and tofu shots are making me CRAVE ’em! But guess what I just had for dinnnnna?! Toasted, whole wheat bread slathered in ROASTED RED PEPPER SABRA hummus w/ yves fake turkey slices, spinach and leftover guacamole (from last night’s chipotle dinner) !!!!!!!! You would have loved it! But ah, it was such a process putting that sandwich together. I’m hiding the sabra, so I had to be STEALTH when assembling it!

    Here it is kids: *Classic White Un-Cheese*(adapted from Joanne Stepaniak’s cookbook Vegan Vittles) 1/4 cup reg firm tofu (pressed, patted dry) *i used silken 3 tbs nutritional yeast 2-3 tbs tahini 2 tbs fresh lemon juice 1 1/2 tbs miso *i used 1/2 tbs bc i think this stuff is VERY potent 1 tsp onion granules *i used onion powder 3/4 tsp salt 1/4 tsp garlic granules *i omitted for kyle’s sake 😉 3/4 cup water 3 tbs agar flakes *i omitted to get a sauce texture, rather than a real cheese block

    (if you use this recipe, you will get a block of cheese, I omitted the agar flakes to get a sauce instead) other adjustments are noted with the *

    it tastes like that fake powder that is in mac ‘n cheese packets…ah the things from my youth. we only got those trashy meals when we had a babysitter and my mom was lazy so it was a BIG deal. im not sure i actually liked it, but it was still fun to know we were rebelling…even if it was a mom approved rebellion. wow im a nerd.

    eek! i have NO CLUE what my turkey day holiday scene is gonna be. i actually think im going to try and make my way to kyles parents – i *still *havent met my 3 month old (future) niece!!! but who knows if that will be on the actual holiday or somewhere around it…too bad hospitals dont exactly shut down shop like most other normal jobs. ill keep you in the know. gotta meet my fellow bruin, yaknow?!
