I didn’t take photos of my breakfast oats because they’re monotonous and (quite frankly) snooze-inducing at this point.

Can I get a virtual high five for weaning myself down to ZERO pieces of gum?!  Heyooo!  More on that on my FODMAPs site.

Post-work food.

Herbed bread twists made from scratch [vegan].  They are like little pillows of carbohydrate heaven.

Brown rice & veggie quiche [vegetarian, gluten free].  A twist on this recipe.

Mac ‘n Cheese [vegan].  I added in spinach because green-less meals make me sad.

Do you plan dinner before work, during work, or after work?

I plan dinner before, during, and after work. I also plan breakfast before, during, and after my morning workout. I love food.

Oh man. You can get a serious high-five on weaning yourself to ZERO pieces of gum. I have a serious gum addiction. I buy it at Costco and since I’ve started my PhD program, I actually chew an entire pack a day. (I cannot believe I am typing this out to publish on the interwebz; that is legitimately embarrassing.) I’ve been chewing tons of gum for years, though, and it’s completely stress-habit. If I don’t chew gum, I find myself grinding my teeth. I am not sure how bad this sort of addiction is. Gum is my one and only vice- I don’t drink or smoke or anything. But still…maybe I should be worried huh?

i buy the costco pack of the orbit gum in spearmint and i have gum in my locker, my purse, my truck, my backpack…in a 10 hr shift i try to limit it to 2-3 pieces a shift. on nights, my breath always feels not fresh no matter what i do and i’d hate to share that with pts!

aaaaand recipe coming soon for the bread twists? 🙂 i tried to find the recipe for the green pesto looking sauce on your pasta, but didn’t find it (or i missed it). is that the mac and cheese from the cookbook?! can’t wait 🙂

  4. Abby

Nope. I need my (sugar-free) gum to keep my yapper busy. I know it’s not the “best” thing ever for me, but it’s a stress reliever, a habit and my vice. Don’t mess with my gum 😉

As for meals, I am always thinking about the next meals while I’m eating a meal. I tend to stick to the same things in a random rotation, so I don’t really get that creative. Plus, I like to know what to do when I get home from work instead of wandering around the kitchen like a hungry nomad.

I usually plan my dinner as I’m walking home from my last class!
    Those bread twists look AWESOME!!

  6. Lou

I “plan” dinner as I make it…. I just go with the flow… and what we have in the cupboards to make something (hopefully) edible! Yay for no gum, hooray 🙂

  7. Abby @ Abz 'n' Oats

Zero pieces of gum=you are a rock star. My dinners on work nights are usually a bowl of cereal, a smoothie, or an egg sandwich. I have absolutely no desire to cook when I get home from work.

love the idea of your avocado and egg sandwiches! i finally tried one and it was so delicious. I don’t usually plan my meals every day, because sometimes I’ll come home from work and crave something completely different that what I thought earlier in the day or week.

those eats looking amazing! can we get the deets on the bread twists and mac n cheese??

I Am a nurse as well and I find myself chewing SO much gum at work! Like a half a pack. It’s a awful habit and I notice I am much more bloated and gassy at work! Crazy that that could be related to gum! I’m definitely going to try to go without. I always plan my whole days of food the night before….it takes so much prep work, but so worth it the next day so I’m not starving! Good luck on no gum!!

  11. Heather @ Kiss My Broccoli

Aww, I’m ALWAYS adding more green to my meals too! Never thought about adding spinach to mac n cheese though…great idea! Avocado and egg sammies are the best! I can never get enough!

Most of the time, I plan dinner on my way home from work or (if I head to the gym after I get off) during my workout…talk about incentive to get in and get out! Get out of my way people, I’ve got dinner to make! 😉

Is that GF bread in the first pic? I can’t believe how fluffy it looks…or is it just a facade?

  12. Chelsea @ Designs on Dinner

Greenless meals make me sad, too. Colorful meals always seem to taste better for some reason. Also, those herbed bread twists look fabulous. 🙂

it is udi’s GF bread. the stuff is outstanding. i only wish they could figure out a vegan and gluten free bread..or offer it at a cheaper price. it has eggs, so i eat it because it doesn’t pose any GI issues for me, but for the people who want both vegan and gluten free bread, it’s a bummer.

i was shocked too…i really thought one piece would be better than several, but it wasnt til i totally eliminated it that i felt the difference. and it was big.

  15. Elise (Post author)

yup. the recipe for the bread twists is coming soon. the mac n cheese is from this cookbook: http://www.hungryhungryhippie.com/gluten-free-vegan-comfort-food/

and yes, the recipes for the bread twists and the pesto are coming soon and the mac n cheese is from the cookbook. 🙂

    thanks dude!
i had a similarly mortified reaction in openly admitting the amount of gum i chewed on a daily basis. when we travel i bring more gum than underwear.
my mouth felt the absence at first, like it was dry and missing something (so pathetic sounding!!) but then i started drinking more water and getting over it. i think (fingers crossed) im officially over the hump and done with it forever.
