Back in the swing of salads

Hooray!  I’m finally caught up on Hawaii posts.  Well, not exactly caught up.  But whatever, I’ll get there.

After going to bed at 1 am I was NOT ready for Valley to wake up at 5 am. Luckily I went in and snuggled with her a bit and she went back to sleep…but I was stuck awake. Dang it.  Let me let you in on a little something something about me.  I’m a sleep DIVA.  Four hours is NOT OKAY.  Yeah yeah yeah…I just spent weeks in Hawaii, no one is playing any violins for me getting no sleep.  Touché, I’ll move on.

Once she WAS up, she made a bee line for her new Elsa shoes.  Thanks to her Aunties, she now has more accessories than I.  Ugh.  Who is the diva now?

Didn’t last long.  Poor baby.  Jet lag is a beezy.

Kyle and I both worked out while both kids continued to snooze the morning away.

Anddddd back at it!

I made them oatmeal for breakfast and then pulled some Nourish bread from the freezer for me.

Which I topped with this little souvenir.  North Shore Goodies macadamia nut honey coconut peanut butter!  WOOHOOOOO.

So smooth.  And creamy.  And wonderful.

After breakfast was out of the way our family did a divide and conquer.  Kyle took V to a birthday party and I took P shopping with me.  Neither was super fun, but I think I may have gotten the better end of that deal.

BTW, being up at 5 am allowed me to get a major jump start of the weekend food prep.

Kale – check!  Vinaigrette – check!  Roasted squash – check!  Etc.

Hello old lover!  I missed you so much!!

It was every bit as delicious as I remembered.  Mmmmm.

Moving on to Sunday!

I never finished this paleo pumpkin bread (I froze the second half of it before we left) so it was exciting to get it back out and dig in.

Same lunch scene.  Still stellar.

As for dinner.

We had the wild rice salad and chicken I shared here.

I roasted extra chicken to have for the kids’ meals during the week.  I’m writing down the kids’ meal plan this week to share with you again since it was such a hit last time.

Before I went to bed I made a batch of the kids’ favorite everyday granola as well.

I have been taking some photos this week, but not a ton because Kyle’s gone and my meals (salads) are highly repetitive.  My sweet tooth needs to be addressed as well, but we will save that post for another time.

    Ugh, the getting up too early because of jet lag thing is NOT fun! I can get by on surprisingly little sleep, but then again those days include copious caffeine….
    that macadamia nut butter sounds like the best thing probably ever! Wow. Too funny that the lunch salad is back, i feel like when I return from vacation i have new cravings- then again familiar homemade foods also appeal. It always feels good to be back in the kitchen though!

    I really thought spring and summer would bring on new cravings…we will see (winter squash can’t continue through July!?!?)
