Here’s a breakdown of a few of the meals from last week.

First, the personal pizzas.

The only difference between Kyle’s pizza and mine was the cheese.  His was a cheddar and parmesan mix, mine was Daiya.

I used Vicolo organic corn meal crusts.  I’ve seen them at WF forever, but this was the first time I bought them.  Totally love them.  Going to buy them again and again and again now.  I can’t stress just how in looooove Kyle and I both were with these pizzas.

FYI, Vicolo is a San Francisco based company and they use non GMO corn.  Yay!  Oh, and the pack comes with two crusts.

I put them in at the same time and they only took 15 minutes to cook (at 425 degrees F). 

The sauce was 365 roasted red pepper marinara.  My favorite.

The sausage was Tofurky beer brats (one sausage for both pizzas).

Kyle polished off his entire pizza.  I managed to save one slice for my work lunch the next day.

I wanted to eat the entire thing, but it was so late (and I hate going to sleep with a full(er) belly).  I still had some heartburn/reflux with this, but that’s par for the course with tomato dishes as of late.  Oh pregnancy. 

Next up, the rice, beans & sausage dish.

My mom used to make a dish JUST like this growing up (with turkey or chicken not vegan sausage). 

Like the pizzas, this meal was quick to throw together and took very little time to cook.

I made the rice in the rice cooker earlier in the day.  The black beans were canned.  The corn was frozen.  And the sausage was the same Tofurky beer brats.

I made a slightly different version for myself.

Instead of beans and corn, I used collard greens (my stomach was being fussy so I went with a lower FODMAPs meal).  I added olive oil too.  Standard hippie bowl with a green, a grain, and a protein.

Finally, there was this breakfast with sweet potato hash and a fried egg.

Grating this sweet potato was one serious arm workout.  I had to stop a few times to rest my biceps.  Sad.

Next time I’ll just use the food processor.

Coconut oil + sweet potato.

I let it cook and char and flipped as necessary to get all sides evenly crispy.

It smelled awesome.  Reminded me of sweet potato fries, actually.  Mega yum.

Afterwards I topped it with a fried egg (and dipped both in BBQ sauce on the side).

So there you have it.  It’s no secret, I’m all about the simple stuff.  Nothing elaborate, especially on work nights.

    That sweet potato hash sounds really good with the coconut oil. I need to make some hippie bowls in the next few weeks, they’re easy to prep while I’m busy with school.

    A quick and easy way to cook sweet potato is to wash it, pierce it and then wrap in cling wrap and zap it in the microwave for a few minutes. A 15 cm (6″) chunk will take about 3-4 minutes in the microwave. The water from the washing will then steam the sweet potato. When it’s done, i just use a spoon or fork and dig at the flesh. Nice and soft and no added extras 🙂 You can do the same with corn cobs too. Just don’t need to pierce it. Corn cooks in a little less time.

    Elise! I swear I have a life, although it may not seem like it since I have so many questions/comments… I just really value your opinion/blog,. I don’t stalk all the bloggers whose blogs I read like you! Anyways, if you ever have time for another suggestion, I’d really like to see some sort of top ten list of the easiest things you make for dinner. I’m culinarily challenged, and time challenged, and I’d love to know what you think are the easiest/fastest meals to throw together that have nutritional value (now that I have most of the ingredients thanks to your other very helpful post.) No hurry, obviously you have plenty going on. Keep up the good work!

    Elise… However you want to do it. I am up on your formula and I like it. Maybe just some of your most recent faves that you think are easy. I just thought of it so I didn’t iron out the kinks in my mind before I requested it. I guess I just love lists… My brain is simple 🙂
