My pitaya smoothie

This delicious smoothie is actually this vivid pink purple gorgeous shade of healthy.  I’d venture to go as far as to say it was even more vivid in person, too!!  Seriously.

Good food is pretty.  And it’s kinda awesome that it makes you feel good for multiple reasons.  Like beyond the stellar nutrient profile that fuels me, it makes me smile and puts a spring in my step because HELLO it is bright violet yumminess in my face!

Let me tell you about Pitaya Plus.  In case you haven’t heard of it (I hadn’t) pitaya fruit is the same thing as dragon fruit.  And what Pitaya Plus does is freeze the raw fruit in little packets that are totally perfect for smoothies!  It’s so awesome!  They make big packets and little cubes – and there’s nothing added – just pure 100% fruit.

Key awesomeness it does have?  Antioxidants, vitamin C, and magnesium, to name a few.  Oh and did I mention?  It’s organic, non GMO, vegan, gluten free, dairy free, kosher, and vegan.  And since it’s raw, all the live enzymes are intact.  It’s the new acai peeps.

Only 8 g of sugar (13 g total carbs) per serving!

I can’t really find a way to describe the flavor because it’s so unique that there’s nothing else I can use to compare it to.  It makes a dang good smoothie.  Paired with coconut milk it’s super creamy and rich.  And by adding in seeds it has protein to hold you over (from the hemp) and gets all thick (from the flax).

Creamy coconut pitaya smoothie bowl [vegan, gluten free, nut free, soy free, dairy free]

  • 4 coconut milk cubes (canned coconut milk frozen in ice cube molds)
  • 1 pitaya plus packet
  • 1/2 banana, frozen
  • 1 tbsp flax seeds
  • 1 tbsp hemp seeds
  • 1/2 cup water

Directions:

Blend everything together until smooth.

Notes: Sub hemp milk (or any other liquid) for the water to add even more oomph.  Replace seeds with nuts if you tolerate (2 tbsp cashews make a bomb comb).

    Not not generally. I think my smoothie phase is coming to a slow down…I have had muffins or quick bread or some other baked good (with sun butter or Earth Balance) for the past 5 days.
