Prepping blended green juice

I feel like I’m so far behind in posting because we have been going going going…that’s the way of this summer it seems.  Kyle was gone for a couple of days last week and it was a fairly empty week as far as the kids’ activities were concerned so I made an impulsive field trip to SF for the day.

We went to the California Academy of Sciences.  And just for fun, check out the photo on the right from a trip we took previously almost exactly one year to the date!

I packed us lunches.

It was so great to wander without any agenda, but by 3:45 it was pretty clear they were worn out.  P fell asleep before we even got to the freeway, but V stayed up to be my traffic buddy.  Oh the traffic!  Leaving the city is such a nightmare.  I thought we would avoid some of it because it wasn’t a Friday and it was before 5, but it took us almost 3 hours to get home (double what it usually takes).  Ew.  We facetimed with as many people as possible between podcasts.

That said, it has been 400 degrees here in Davis, so escaping to the chilly city was a nice break.

This is how sweaty you are when you bounce house for TWENTY FIVE MINUTES in 100 degree heat…

They split a 30 ounce lemonade (a gift from the hot dogger vendor) and then ate all the ice cubes!  Hellooooo hydration!  This was their first time having lemonade and I can’t think of a more perfect opportunity.  It was insanely hot and the only reason I decided to brave farmer’s market solo was because I didn’t have dinner plans for the kids.  Obviously I could have easily made something for them, but after a long day with plenty of nagging I was in the mood to be a hero.  Worth it!

I ended up eating chocolate cake (gluten and dairy free leftover from I don’t remember what birthday celebration) and almost this entire pint of vanilla ice cream that night.

And then I stayed up way too late making marinara.  More on THAT later…

In the meantime, how about a blended juice recipe!  It balances out the cake and ice cream. 😛

Blended juice is really just my way of saying, green juice that I made in the blender.  So fiber-full and texturally like a smoothie, but without any powders or milk.

The reason I wanted to give this a try is because I have been craving green juices but don’t want to spend $$$$ on the Sun & Soil bottled ones.  Plus, I have everything on hand already!

  • 1 pink lady apple, cored and chopped into chunks
  • 1 small cucumber, ends trimmed
  • 1 large knob of ginger, peeled and chopped into chunks
  • 4 cups kale
  • 1 cup iceberg (or whatever other lettuce you want – spinach, romaine, etc)
  • 1 cup baby carrots
  • <1/4 cup water (just enough to get things blending)

I had iceberg leftover from my parents’ party that I had no idea what to do with, so I figured this was as good as use as I could come up with.  Romaine and iceberg are super watery lettuces anyway, so it was a great choice to add liquid to the drink.

Once it was all blended I poured it in a huge mason jar to enjoy throughout the week.  The genius part about it…I’m sure you can guess, since I live by advanced prep…

It is thick and so you can just scoop a few spoonfuls into a cup of filtered water, stir it up, and then sip for a cool greens juice whenever you want!

I added water, lemon juice and stevia one morning for a green lemonade kind of thing and it was SO GOOD!

Completely smitten with my new green juicing plan.  It lasts several days and makes it impossible to not make a healthy choice (because it’s already right there!).

    It was roughly 1 cup water, 1 tbsp lemon juice, 3 drops liquid stevia, 1/4 cup “blended green juice”…give or take…

    Genius move with the blender “juice”! Although my blender is sooo not up to that kind of workout 😉 no matter what it leaves kale in tiny chewy bits that are really unpleasant. But i use my juicer a ton- lately that’s where the not great watermelon goes (unfortunately a lot of that this summer) and some cucumber and lime. You can do so many kinds of juice that way! Tomato, cucumber, cilantro and celery makes a great savory juice- if you peel the hairs off the celery im sure that would work. I add a pinch of salt and pepper too which makes a big difference.
    That’s kind of awesome the kids are managing to play outside even in the crazy heat- I’m sure everyone would go batty staying inside all summer!

    I love my juicer!! I eneded up buying a juicer due the amount of money I was spending on cold press juice. One can never go wrong blending or juicing. I also find it a great way to use up extra veggies and fruit. Your post always motivate me to be creative with food. You have a beautiful family.
