Trader Joe’s carrot ginger dressing

I’ve been eyeing the no longer new but semi recently released vegan dressings from TJs for a while now and finally decided to give this one a go.

First thought: wow there’s a lot of shallot going on there.

Second thought: good job TJs for making a dressing without sugar.

Now, what to put with these interesting flavors?  Bacon wrapped dates!

And kale!

That kale is from our garden.  It’s going bonkers with the greens right now.  I have so much rainbow chard I don’t know what to do with it.  I have a ton of kale, too, but I know EXACTLY what to do with that.  🙂

So once I massaged a big big big bowl of greens with half of the dressing, I added salty dry roasted almonds and bacon wrapped dates.

And voila!

This beauty was born.

To make the bacon wrapped dates:

  • Preheat your oven to 400 degrees F.
  • Slice bacon slabs in half.
  • Pit and halve medjool dates.
  • Wrap the bacon around the date so it overlaps by at least half of the date (going around 1.5 times).
  • Place seam side down on a baking sheet
  • Bake for 20 minutes or until bacon is cooked to your preferred don-ness.

Feel free to reserve the bacon fat to massage the kale in first.  It’s so good at breaking down the fibrous greens.  The dressing will love the kale that’s already semi wilted.

    I liked this dressing but actually loved the green goddess even more- which is surprising because it’s really low calorie but very herb-y and fresh; a bit thin but it coats everything really well.

    I wanted this carrot miso one to be like the stuff at japanese restaurants and it just wasn’t. But without that expectation it’s certainly tasty!
    Can you use chard for chips like kale chips..? Or shred amd saute and cram into a frittata or maybe a bowl meal…

    Definitely not as good as that asian miso dressing. That stuff is sooo good. Good idea with the chard! I was just going to freeze it for smoothies. I like the chard chips idea!

    An old friend used to make the bacon-wrapped dates as appetizers for her parties but with one minor change: she put a bit of chunky peanut butter inside the date… EPIC!
