Trail mix pancakes

Look what Mr. Savory requested for breakfast!

Kyle was really proud of his idea for trail mix pancakes.

He wants full credit for this breakfast concept (even though I made them), so if you’ve seen these before just keep it to yourself.  😉

I made the batter the night before (leaving the trail mix out) and in the morning breakfast was pretty much ready to go.

Trail Mix Pancakes [yields ~10-14 small pancakes]

Ingredients:

  • 1 1/2 cup all purpose flour
  • 1 tbsp baking powder
  • 2 tbsp sugar
  • 1/2 tsp salt
  • 1 1/4 cup almond milk (I used vanilla)
  • 1 egg
  • 2 tbsp oil
  • 1/4 cup trail mix

Directions:

To make batter, mix wet ingredients and dry ingredients separately and then combine.  Don’t add in trail mix yet.

Heat pan, add butter/oil/non-stick spray, and then add (~1/4 cup or more) batter.  Turn heat down to medium.

Once the pancakes have cooked for a minute, add the trail mix to the top of the batter.

Wait for the middle portion of the pancake to bubble before flipping.  It should be mostly cooked at this point, with edges that are basically done.

It only needs to be on the other side for a few seconds before it’s done.  Leaving it on too long will cause the chocolate in the trail mix to melt too much.

I used the Costco trail mix for his, but stuck to (frozen) blueberries for mine.

And then topped them off with Earth Balance and maple syrup.

Leftovers were devoured the next day.

I used this almond milk in the batter, but it’s especially good to drink solo.  Califia Farms is a recent find, and I’m pretty excited about it.  It’s thicker than most almond milk and has a strong vanilla flavor.  I know (from their website) that they have other flavors, but our local grocery store only carries this flavor.

I’ve bought the vanilla almond milk twice now because Kyle and I are both fans.  It works great in coffee, almost mimicking a cream in both thickness and flavor.

Hopefully I’ll be able to find the coconut milk or the plain almond milk soon so I can let you guys know how the other kinds are.

    Do you buy that almond milk at Whole Foods? I’ve seen it on a couple of blogs but not in the store yet. I rarely make the trek to Whole Foods (OK, the WeHo location is really not that far).

    And would you believe that my husband — lover of all things sweet, hence the diabetes — does not like pancakes? So weird. More for me, at least.

    its not at whole foods actually, i got it at vons. i think the coconut milk is at gelsons.

    Yumm. We used to make something similar when we were camping in the summer. I like the way the M&Ms get melty but the shell still holds it’s crunch. Sublime!

    I have Crohn’s Disease and if I were to recommend one thing without knowing anything about your digestive issues, it would be KEFIR. All you need is about a shot glass…ok, a dixie cup, ha ha…of this probiotic a day to notice a difference. You can get it near the yogurt in almost any grocery store these days, and the organic is generally not much more expensive.

    ive been meaning to try kefir for a while. curious about casein vs lactose sensitivities and i think kefir would help me hone in on which is more difficult for my gut.
    i also took doctors best digestive enzymes prior to pregnancy which ill likely resume soon.
