Twelve-nola

First recipe of 2012 comin’ atcha!

It’s fitting that it’s a granola recipe…me being a hippie and all.  Granola recipes are also my specialty.  I think I’ve pretty much mastered the balance of sweet, crunch, and hearty.  At least in my opinion.  Go ahead and make it and let me know what you think.

Protein Power Crunch

*high protein *gluten free *vegan (if eggs omitted) *FODMAPS friendly

Ingredients:

  • 1 cup whole rolled oats
  • 1 cup uncooked quinoa
  • 1/2 cup raisins
  • 1/2 cup almond slivers
  • 2 tbsp cinnamon
  • 1 egg white (to make vegan sub 2 tbsp chia seeds with 1/8 cup water)
  • 1/8 cup vegan butter, melted (Earth Balance)
  • 1/4 cup maple syrup

Directions:

Separately mix dry ingredients together (from oats to cinnamon) and wet ones (egg, butter, & syrup).  Then combine and stir until everything is evenly coated.

I prefer maple syrup to most other sweeteners.  First of all, I think it tastes best.  Second, it’s FODMAPS friendly.  Third, it’s delicious (did I already mention that one?).

Once all the ingredients are uniformly coated in sweet buttery goodness, you spread everything onto a sprayed baking sheet.

Bake at 225 degrees for 70 minutes.  You can flip and stir the granola at the halfway point if you are so inclined, but it’s not necessary.

Mmm…toasty! 

Wait for it to cool (or don’t) and dig in (warm granola could be one of the best things ever).

In terms of effort, this recipe requires minimal work.  Granola is so freakin’ simple…promise me you’ll never buy it again, okay?

The combination of the quinoa, egg white, and almonds pack this granola with some serious protein.  Lord knows I get the “but where do you get your protein” question often enough.  This entire batch of granola has 54.6 grams of protein.  Not that you’d eat the whole thing in one serving…but crazier things have happened.

Store in an air tight container so it doesn’t go stale (not that that’s a problem when you have 6 hungry hungry hippies staying under one roof).

    Is this one kind of “chunky” like the original quinoa granola? I love that recipe soooo much… But this one is next on my list now! As for special requests….if you can help me figure out high protein lowish fat snacks that are ok in a desk drawer or handbag that would be great! I spend too much on dry roasted edamame and that addictive primal strips tofu jerkey… Maybe some kind of savory quinoa snack nuggets?? Im obviously making stuff up here-

    no i think youre onto something here…my mind is on a roll brainstorming now…ill see what i can come up with! for now im a corn nuts whore, but i think ill attempt a savory snack thats wallet and desk (storage) friendly.

    ps to get the granola more clustery just up the egg white (or chia/flax seeds) a bit. one more egg white or one extra tbsp of seeds should do it.

    Great recipe, this sounds wonderful! For other recipe ideas, how about more uses for TVP? I usually have it in my pantry, but have been lacking on inspiration with it lately.

    ah tvp. i used to adore the stuff…since discovering fodmaps and doing an elimination diet i found i really dont tolerate it at all, so i have pretty much eliminated it from my diet. that said, its a wonderful tool for vegans looking to amp up the protein in recipes. maybe ill make some chili/soup recipes for kyle with the remainder of my pantry stash…

    I made this recipe again yesterday for the um, 5th? time and used the chia egg, swapped the earth balance for coconut oil, and used mixed salted chopped nuts. Wwwoaaahh. Highly recommend the salted nuts. I may or may not have eaten this for 3 different meals in the last 24hours….!
