A new salad and some GI reflections

So I know I already blogged about our amazing dinner on Saturday night, but here’s the food from the rest of the weekend…starting back with Saturday am.

This oatmeal had every kind of fruit in the house in it!  There hasn’t been a single breakfast item (pancakes, oats, smoothies, whatever) that doesn’t have nectarine in it this past month.  I made this batch of steel cut oats for the whole fam with water, chia seeds, and coconut oil and then used strawberries, blueberries, and bananas to sweeten it (slash use up the odds and ends before the next week’s grocery shopping).

I had this same lunch salad both Sat and Sun – kale massaged in balsamic vinaigrette, with smoked salmon, feta, and sunflower seeds.  Ever since I discovered the Pastures of Eden feta I’m obsessed.

Of course you KNOW what happened when I went grocery shopping at TJs for this week’s haul.

They.  Were.  Out.

Yes, really.

Allllll the other cheeses were stocked and overflowing out of their spots and then the one space where that feta usually is was completely empty.  A cavernous hole to the back of the wall.  🙁

I’m starting to think I shouldn’t blog about my fave TJs items anymore because every time I do they are GONE next time I go to the store!!  Case(s) in point: gnocchi, fireworks chocolate bars, chai almond chocolate bars…

Anyway, until this comes back in stock I’ll have to branch out.  I got a new kind at Nugget that is a blend of sheep and goat milk.  Stay tuned!

Also, make this salad, because feta and smoked salmon are a salt lovers heaven.

Sunday night was pizza night.  Valley’s request.  🙂

I had this box of Simple Mills pizza dough mix in the pantry already.

I baked it in advance of the rest of the meal’s prep because we were heading out that afternoon and I just wanted to get it done during naps.

It worked fine leaving it pre-baked and then just re-warming later when I topped it.

I used vicolo crusts for the rest of the fam.

For toppings, we went with mushrooms, pepperoni, and bell peppers.

I used vegan cheese on mine and the kids’ but gave Kyle fresh mozzarella.

I love the way pepperoni curls up when it cooks.  Applegate pepperoni is yummy stuff.  The house smelled soooooo good!

That said, I actually think it was the Simple Mills crust that really turned our casa into an Italian restaurant.  When I opened the package I was met with the best herby aroma ever.  And while it was baking Kyle was like “what is THAT SMELL!?”

The dough makes two pizzas, so I figured I’d eat one now and one another day.

I made a side salad with spinach and arugula tossed in this Italian dressing.

What is with me and these new flavor profiles I’m loving…feta, arugula, sun dried tomatoes…???  My palate is really changing from where it was a year ago.  It’s odd how that happens.  I wonder if it’s just nutrients your body needs or if you just learn to like different foods or what.  Because outside of hummus, Mediterranean fare wasn’t really may fave and now it’s all I want.  Even tahini!  I could basically eat it plain off a spoon these days, but definitely wasn’t that much of a fan a few years ago.

I also want to note that my body was totally fine after that farm dinner – where I ate dairy and wheat and alliums and whatever other fodmaps were in the food.  I really don’t know what’s up with my GI tract these days, but now that I think about it, it has been pretty good!  Definitely a relief after that prolonged flare in symptoms a while back.  I did buy a new probiotic ever since my last one ran out – maybe a month ago (?).  I doubt that has anything to do with anything but who knows.  Perhaps the stress free ambiance of being out in nature for the farm dinner played a part?  Although since it’s been improved for a while there’s probably more in play.  I bet the CBD oil has hit it’s peak in my system now that it’s been a couple of weeks?  Earlier I was thinking about how I didn’t really feel like it was doing anything because psychologically I felt the same.  But now that I realllly think about it, I have been feeling less high strung this week…hmmm…I’ll have to check back in on myself.  I just looked up when I started it and it was a full month ago.  So it has probably reached a stable level by now.  Maybe I judged it too soon before.  It did say it would take two weeks to reach the right concentration.  I dunno.  Too soon to tell.  We will see.

    I spoke with someone and got a tailored program to find the right dose for me. I do two sprays in the morning and two at night.

    I have read that the greek feta in brine at TJs is great, but I don’t know what kind of dairy it uses though….
    i know what you mean about different flavors appealing, i have always loved anything salty and brine-y but lately anything with lots of umami i use everywhere; miso, soy sauce, mushrooms and kimchi are fridge staples.
    That’s fabulous your tummy had been on good behavior! Could be that probiotic helping, seems everything i read anywhere talks about how important gut health is lately

    Yes! I did a month of Quicksilver Scientific Hemp oil as per my holistic nutritionist a few months back and REALLY felt a difference in the stress level in my body. It’s fantadtic for helping that parasympathetic nervous system regain strength after trauma & during a stage of healing. Some of my difficult GI symptoms were noticeably improved and my mind (&anxiety) was much more at ease while I did it regularly. I would love to keep doing it but it’s not cheap! I think it’s great!

    100% agree. I suppose it’s a balance…because it’s certainly cheaper than therapy or meds, but it’s expensive to get the good quality trusted brands…but I feel the same as you about how it has helped me in a myriad of ways.
