A weak end

A few quick things:

1)  I’m glad you enjoyed the wedding recap.  The final installment is under way and should be ready soon.

2)  My weekend was a disaster scene.  It started with Friday night and ended with Friday night.  I did learn an important lesson, though.  I’m not 21 years old anymore, and therefore, I’m not immune to hangovers.

3)  This post is going to be highly incomplete because certain photos make me nauseous.  For instance, the below.

I love the 80’s?

Who remembers Double Dare

I had a partner in crime of course.

I’ll take the physical challenge Marc!

So yeah.  Kyle’s orientation ended with a big 80’s party for the whole class…which of course turned into a totally debaucherous affair.  Grad students are no joke when it comes to letting loose!  I suppose I’d do the same if I were reading 200+ pages a night of financial mumbo jumbo.

Here’s one of the only blog worthy meals of the weekend: peaches and bananas with plain greek yogurt and cinnamon sprinkled on top.

The rest of the pictures I have from the weekend are weak.  Seriously weak.  Most meals are either straight from the freezer or straight from the pantry.  The fact that we didn’t have any apples in the apartment was the nail in the coffin.

To be honest, I didn’t even want to post about this weekend at all.  I wanted to simply pretend it didn’t happen and start fresh with Monday.  Unfortunately, life doesn’t work like that, so I may as well own up to it.  I wouldn’t mind TiVo leaking into real life sometimes…bad day…delete!  Ok, not really.

The main reason I am posting is to share my take-away dessert from Real Food Daily

Allow me to introduce you all to the Strawberry Sourcream ‘Tofu Chz’ Cake

IMG_3525

Unlike other tofu-based “cheesecakes” I’ve tried, this was more tangy and tart than sweet.  I guess that’s the “sourcream” part.  It almost tasted like a cross between a key lime pie and a cheesecake.

The top layer was fluffy and light while the lower half was a dense but silky tofu cake…topped with fresh strawberries.  Yum!  I think I want to try making my own version soon.  Maybe now that this weak end is over…

I love this post for so many reasons….mainly because as a 12 year old pre-teen I was on double dare with my father and best friend at the time. I remember getting slimed and getting a glo in the dark sleeping bag. Thanks for the heads up as to what my Halloween costume needs to be!!

OMG, I used to freaking LOVE Double Dare! My sister and I used to wait for it to come on and fight over what we would do on it etc. Good times 🙂

Double Dare – I just took a trip back about fifteen years….wasn’t there a goo challenge of some sorts?
I’m always on the lookout for a good vegan cheesecake recipe – the tofutti variations just don’t cut it for me!
