A whirlwind work weekend

I’d try to label these meals, but since I’m still on a bizarre night shift schedule breakfast is dinner, dinner is lunch, up is down, left is right…who knows…time is irrelevant in my life now.  I’m not really normal anymore.

I made a PB & AB sando.  Yeah, skip the jelly, my sandwich was all about nutbutters. 

I ate some straight outta the jar too.  I have no shame.  I just sat on my butt, spoon, jar, spoon, jar, spoon…you get it. 

It occurred to me (after slowly licking 1/2 cup of nut butter) that I was looking rather ridiculous with my spoon hanging out of my mouth.

This made up my next two meals – “cheesy” kale & couscous.  I promise to give you the recipe.  It was sooooo good!

I think this was a breakfast, but I can’t be too sure.  I wasn’t even all the way awake when I ate it.  Overnight oats with chia seeds, peanut butter, raisins, chopped apples, and cinnamon.  We are now ALL OUT of cinnamon. 

We have the 15 jar tiered spice rack from Crate & Barrel that says you get free spice refills for five years after you bought it.  Here’s the lame part they don’t tell you.  You have to register on a different website within 90 days of purchasing it AND you still have to pay for shipping and handling.  What kind of BS is that?!? 

Refilling the cinnamon therefore costs $4.40 (ummm, no thanks!).  I guess I’ll just go to the store and buy another one.

This was half of a work meal.  Salad ginorme with lettuce, carrots, bell peppers, cucumber, sprouts, and seitan.

Check out this new tea I just tried!  It’s decaf and I luuuuve it. 

For those who recommended Rooibos teas, good call.  It’s yummy.  Plus I adore how Yogi tea bags have nice little messages.  Leaves me especially zen.

    Aaah, you look pretty in that picture! As does your nut butter toast 🙂 I don’t actually like jelly on my nut butter sandwiches, I much prefer sliced banana or other sliced fruits. More crunch or smush or texture variety, lol! I’ve said it before, and I will probably say it again, but your work eats (and all your eats in general) are amazing and inspiring, you set such an incredible example for eating well (very very well) on a busy schedule and shift work to boot 🙂 xyx

    I always get whatever spices I can from the Spanish section of the grocery store (the Badia ones). They’re wayyyy cheaper than the ones in the actual spice section!

    Just a quick tip — the cinnamon at Costco is pretty good and VERY cheap for lots of it! You can refill your little jar plenty of times! I do lots of baking and use it a lot, but it lasts a while and stays very fresh! And what Costco do you go to for your Sabra? I live in Whittier, and the La Habra store has Sabra Roasted Pine Nut and some other flavored stuff. I like the plain hummus — I should say, I LOVE the plain hummus! I could eat it like you but don’t because it would cost me way too much money. Let me know where you get yours — oh besides WF, as I don’t have one of those anywhere near me!! Thanks Elise!!

    Hope your work schedule gets better. Does it flip-flop a lot or is it just because of the holiday weekend?

    Nothing wrong with PB on a spoon. I think that’s my favorite way to eat it.

    I hate the confusion of which meal is which. I know it shouldn’t be that big of a deal but to me it is! lol. That is ridiculous about the spice rack! What a bummer. I can’t wait to hear the recipe for the “cheesy” kale and couscous. Sounds like a winning combo!

    Chai Rooibos is such a great flavour!
    All your salads look always so tasty, as well as those overnight oats. I love adding apples to my oats and a lot of cinnamon is a must – I sometimes feel like I am having more of cinnamon than oats in my oatmeal:)

    Ha! Double nut butter sandwich, I love that idea! Have you ever scooped some PB on vegan ice cream before? It’s delicious both hot (like a fudge sauce) or room temp (very creamy), if you haven’t, maybe you could try it on your next batch of banana soft serve (bananas + PB = <3 ).

    seitan is a vegan protein (non-meat meat alternative)…check out my FAQs section, under tutorials, regarding how to make it. and the recipes section for some ideas on what to do with it. im in love with it.

    we go to the costco in culver city. thats where i get my sabra in bulk. it has individual tubs of sabra classic, family size of pine nut and family size of spinach artichoke (not as good in my opinion). whole foods doesnt carry sabra (i know, the horror!). most of the vons and ralphs around here have sabra but i dont go to those very often. i think plain and roasted red pepper are my favorites, but the pine nut tastes the same as the plain to me!
