Almost like normal

I bought this salad kit for the mix of lettuce, not so much the other ingredients, because it’s unique to find a medley with radicchio in it. I love radicchio, but I think I may be in the minority. Which is just as well, since this salad was just for me 🙂

I added slivered almonds to the mix, too. And on the side I had tome goat gouda, which was an impulse purchase that I didn’t even have time to have buyers remorse over because shopping conditions are too stressful, I can’t even allow myself to go there with my normal baseline anxiety.

I had this same cheese and crackers/salad combo two days in a row and it was lovely.

The other cheese on this plate is a manchego. Both of them went great with the seedy Mary’s Crackers.

My in-laws shipped me kombucha! How amazing is that!?!

I’ve never heard of this company either. My guess is they are local to Boise.

It almost feels wrong showing meals like this because it makes it seems like nothing has changed in life and it’s business as usual. Kyle grilled tri-tip over the weekend, which we served with roasted asparagus (from imperfect foods) and white rice with butter.

It was heavenly because it was so normal. It made all the insanity of life right now seems so far away.

I took advantage of Kyle being home and did a bit of prep over the weekend too. I made a huge egg bake for Kyle’s breakfasts. I made a big batch of pancakes for the kids (from a combo of oat and buckwheat flour). And also made a big pot of curried short ribs and rice for Kyle’s lunches.

    We’ve been eating well at home too. Sometimes I think our food is better than what you can get at restaurants. I also love radicchio in my salad, as well as any other bitter lettuces.
