I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

I made a comment last week to Kyle about how the 4th of July and watermelon always make me think of Pollyanna. He didn’t really respond and then a few minutes later mentioned he didn’t know who or what I was talking about. When I said it was a movie, he claimed he’d never seen it. I’ve got a pile-up of products to share. As usual, some were good, some were okay, and some were losers. 1. Zing chocolate peanut butter bar Kyle stole this from me, but took a photo (which means he knew he was in the for-Elise-only bar stash). In any event, here is his review: Zing bar was good. Our days of mid-week play are over. Kyle started his new job this week, and it’s probably almost as sad for him as it is for me. I loved having him around on my days off. I really really really wanted stuffed shells for dinner. I saw Jenna’s post when I was planning dinner, which is when the craving hit. We were already planning on having lasagna, so I had everything on hand…minus the shells. I went to 3 grocery stores. No shells. Anywhere. Ugh. After obsessing over it all day, I had no interest in anything else. Finally I found manicotti pasta. A mediocre substitute, but oh well. I woke up wanting oats with almond butter. Problem: no almond butter in the pantry. But I wasn’t willing to entertain any other breakfast ideas. So I set to work. Dry roasting almonds until they started to smell…toasty. I think it was ~10-25 minutes at 375 degrees. No oil. Nada. Just nuts in the pan. They took a long time to cool. Too long.
