I’ve found that eating a mostly plant-based diet has allowed me to continue to live and love life to the fullest. Although moderation isn’t something I do well, I’m 100% devoted to giving my body pure, wholesome, quality food. Nutritious and delicious, all the time.

These were the leftovers from this dinner. Curried cauliflower with greek yogurt raita. The curry flavor was rather intense, so rather than eat the remaining dish as it was served in the restaurant, I decided to try to extend it’s life and balance out the spices. Enter slow cooker. 1 1/2 cups rice + 3 cups water + 1 cup plain almond milk After 4 hours of slow cooking on low, I stirred it all together and added roasted cashews. Since I already shared our living quarters with you, I’ll move on to the rest of the Buenos Aires fun. After showering and cleaning off the airplane nasties we wandered the neighborhood [in search of an ATM and groceries]. By the time we returned home we were completely exhausted. At this point we had been awake for almost two days, but it was “only” 8 pm in BsAs and they don’t do dinner until way later than that. Nowadays I tend to post my more creative recipes as opposed to my thrown together quick plates. But every time I show a random meal that I have mindlessly made up I get requests for them to continue. I guess people just want simple. Here is simple: quinoa, carrots, peas, and seitan. Prep: Bulk quinoa from the rice cooker. Frozen peas. Log seitan made before the work week starts. We contemplated staying in a hotel in Buenos Aires, but thanks to the advice of a few friends, we did a little research and decided rent an apartment for the week instead. We used apartmentsba and found a perfect studio in Palermo. We rented this apartment and would recommend it again and again. Kyle and I celebrated our Valentine’s Day early. We just used the holiday as an excuse to hit up a restaurant that’s been on our mind for a while.
