Week ‘o eats

The whole shebang of last week in one post.  Here goes. Breakfast on Monday was the last of this savory bread and fried eggs.   Breakfast on Tuesday was out – I had a savory crepe with hash browns at Crepeville. Because Crepeville’s portions are awesomely massive I had leftovers for breakfast on Wednesday.  Which I paired with two fried eggs. Chocolate Dipped Coconut Macaroons

Kyle brought these home for me from work. Marc’s mom’s macaroons Ingredients: 4 egg whites 1 tbsp vanilla 1-2 tbsp sugar (to taste) 1/4 tsp salt 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total) [optional] bittersweet chocolate, melted Directions: Beat egg whites until soft peaks form, add salt, sugar, and vanilla.  Mix in 2 1/3 of coconut packet. Scoop into a medium spoon and press in. Put on baking sheet lined with parchment paper. Cook at 350 degrees F for 15-20 minutes. Coconut burns easily… Read more >

Christmas 2013

Round 2!  Actually, if you count the Thanksmas we had in Tahoe earlier in December with Kyle’s family, this is really our third Christmas.    No such thing as too much celebrating, right?!  Especially when it’s baby’s first Christmas. We got to my parents’ house just in time for a few cookies.  Which provided the perfect fuel for the Niners’ game. Davis Christmas weekend

Everyone says the holidays are so much better through a child’s eyes but it’s absolutely true.  I feel so cliché, but my first Christmas as a mom was just about the best one I’ve ever had.    The other cliché about kids enjoying the wrapping more than the actual present is also 100% accurate.  Tissue paper > anything and everything.   Last weekend, Kyle and I celebrated our own holiday with just the three of us here in Davis on Sunday.  Santa came and filled our stockings and we exchanged our gifts to each other. … Read more >

Lake Tahoe weekend
