On a roll

Soooo, I’m on a roll with the creamy vitamix recipes. Cashews > Dairy Guess who’s not a big a fan of the vitamix? Poor little guy gets freaked when the motor starts going.  🙁 He’s fine when I hold him next to the blender, but unless he’s in his mommy’s protective hold, he cries at the scary noise. Cornbread salads

I made this cornbread for one purpose.  Salad croutons. Freezer meals for your summer veggies

I realize this looks like kinda a mess…buuuuut… What can I say? Do you eat with your eyes? No. I created this dish because I had squash for days and thought it would be a good idea to cook some bulk freezer meals so I have healthy home-made stuff on hand. Hello layerzzz. Peach Cornbread Muffins

Like I said before, these are a cross between cornbread and muffins and fruit pie.  Slightly sweet, hearty yet delicate, and light enough to eat a few without feeling like a sloth afterwards. Just a [link filled] reminder… Certain recipes are so good they are worth repeating.  Often. Like quinoa granola. And egg & kale breakfast strata (in muffin form). And mushroom miso & squash stew. And daiya pizza. And vegetarian chorizo & kale rice casserole.
