Chocolate Dipped Coconut Macaroons

Kyle brought these home for me from work. Marc’s mom’s macaroons Ingredients: 4 egg whites 1 tbsp vanilla 1-2 tbsp sugar (to taste) 1/4 tsp salt 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total) [optional] bittersweet chocolate, melted Directions: Beat egg whites until soft peaks form, add salt, sugar, and vanilla.  Mix in 2 1/3 of coconut packet. Our first weekend back in LA

It’s so weird that we haven’t been back to LA since we left back in April.  We’ve seen several of our so cal friends since but not all of them so we decided to pop in for a quick visit. Honestly, we’ve been trying to squeeze a weekend in since this past fall, but then all this (good) stuff was happening with Kyle’s business…and then the holidays came along…and you know how it goes… But we finally got this in the calendar and what a fun time it was! Now.  As much as I adore… Read more >

ABCD quick bread

Making quick breads is really as easy as it gets.  Kind like learning your A,B,C’s – once you figure out the basics, it’s a snap!    I promise I didn’t plan the name of this bread around that little theme, but it was too perfect to NOT call this ABCD bread. It doesn’t have much of a rise, which I may try to figure out in future versions.  Maybe extra baking powder or… Read more >

A crabby NYE

Guess what?  Chicken butt.  I’m five years old. Last year I thought my New Years Eve was the lamest ever (refresher: I was preggo and passed out on my in-laws couch before midnight). Turns out this year was only slightly less lame.  Kyle and I tried to fake an upbeat ‘tude, but in reality we were both pretty blah about our nothing of an evening.  I get it though.  We have a 10 month old.  Life is what it is and I’m certainly not going to complain about this new parenthood situation because, hello!, I… Read more >

Christmas 2013

Round 2!  Actually, if you count the Thanksmas we had in Tahoe earlier in December with Kyle’s family, this is really our third Christmas.    No such thing as too much celebrating, right?!  Especially when it’s baby’s first Christmas. We got to my parents’ house just in time for a few cookies.  Which provided the perfect fuel for the Niners’ game. My little cheerleader fell asleep on my shoulder during the game so I wasn’t much help in preparing dinner.   After we put him down we had a mini facetime sesh with my sis… Read more >
