Vegetarian snack ideas

Now that Kyle’s bringing his lunch to work – and he’s vegetarian – I’ve been trying to get creative with snack ideas. While I’m content eating the same things day after day, he’s not. Nutty pasta

Pasta!! I made this over a week ago, but the recipe is still worth sharing. Although “recipe” may not be the right word, since it’s a pretty loose formula. Planned dinners

The weekly planned dinners have continued with major (budget saving) success, but since I’m serrrriously behind in blogging, I figured I’d give you a teaser of what’s to come.   Wednesday dinner: veggie burger   Thursday dinner: veggie sausage, brown rice, spinach salad   Friday dinner: crock pot veggie chili Saturday dinner: BBQ   Sunday dinner: night shift @ work   I brought my standard seitan, quinoa, & carrot combo as a main. Breakfast quiches

In my last post I mentioned that we’d be starting weekly meal planning.  We’ve never really done this before, but our budget is tight and grocery shopping is pretty much the only area that we spend.  Plus it makes sense now that Kyle’s working and his schedule is consistent (as opposed to when he was in school and constantly had random meetings or events or clubs or whatever).  Now we know when we will be eating and we can plan things out.
