Extra eggs

Our neighbors texted our group chat that they had too many eggs and needed to unload some…so I sent Kyle over to collect some (thinking he’d come back with a half dozen or so).

And this wasn’t even all of them!

Suffice it to say, we’ve been eating a lot of eggs!

I’ve made a strata, two quiches, and hard boiled a dozen…and lots of breakfast omelets…

This egg and veggie dish had tomatoes, bell peppers, and greens (from various CSAs and our yard) along with olive oil, eggs, and cheese. And that’s it!

It was a hit and made breakfast time so fast and easy. Especially helpful for school days!

The quiche was another recipe I made up with veggies and cheese, but I added bacon so it wasn’t vegetarian.

I sautéed shallots with the bacon and then added kale before placing it all in the pie shell and covering it with an egg mix. Then I sprinkled cheese on top and voila!

Served with a simple side salad.
