Gone for the weekend

Just a little picnic on a Thursday afternoon.

I’m going out of town for the weekend – driving down to LA with my mom and sisters for a very special celebration.

And because I am the best wife and mom ever I made ALL THE FOOD for Kyle and the kids to eat while I’m gone.  As in, every single meal.

Kyle already dug into his breakfast strata a day early, and the kids sampled their pancakes already too.  But that’s cool because I made huge portions and then backups just in case they decided to go through a growth spurt while I was gone.  So if they somehow finish 30 pancakes in three days then there’s oatmeal too.

One pot meals are the easiest.  They last for a few days in the fridge and are filling and tasty. I made a few cups of brown rice for two different meals.  The one above has mixed veggies and sautéed sausage.  I deglazed the pan that I made the sausage in to scrape up the browned bits and made that into a sauce to ur over it all.

The rest of the rice went into an Asian dish with edamame and tamari.

I also made a big pasta salad with a red wine vinegar/olive oil dressing, salmon, broccoli and spinach.

This is going to be a huge hit.  My kids devour salmon and broccoli so the fact that it’s in pasta is just icing on the cake.

I also roasted a ton of potatoes and chickpeas.  And if they don’t have enough dinner leftovers for lunches I made a big pot of beans (black beans and chickpeas) with nooch for them too.  We call it benz n chez (which is a fancy way of saying beans and cheese…which is just a funny random thing my sisters and I called beans and cheese growing up).

I’m gonna miss my little fam bam, but I don’t think they will miss me since my food will be providing them nourishment and reminding them of my love all weekend.  <3

    Glad you are getting away for the weekend! Enjoy!
    Kyle and the kids will certainly appreciate your superhuman efforts here to stock the fridge before you left.
