Japanese meatballs

I left off with Wednesday’s lunch…after which we had soccer for both kids which means we don’t get home til late so I have to have dinner done and ready to go.

I followed Gwyneth’s recipe for Japanese chicken meatballs from It’s All Good swapping in turkey for chicken.  And doubling it.

On the side I made quinoa and sauteed snap peas in oil and tamari.

So when we got home, it was all ready to go.

They are usually each others cheer leaders, but sometimes books are more interesting than soccer.

And then I topped everything with home made teriyaki sauce.

DEEEEEELISH!

I was super hungry and we all went back for seconds so it was a good thing I doubled the recipe.  The quinoa and snap peas were totally gone, but I gave the leftover meatballs to Kyle for his lunch the next day.  I don’t know if the turkey made a difference in the recipe (as opposed to chicken) but because there wasn’t any breadcrumbs or eggs or cheese or anything in the meatballs, they were very, for lack of a better word, meaty.  Kinda dense if you know what I mean.  Delicious, of course, but perhaps I’d try mixing some kind of (GF) flour in with them next time.

In case you were wondering, my kombucha is doing great!  It’s healthy and the scoby is growing and there’s sediment and bubbles and I’m sooooo excited to give it a try in another few days 🙂

In the meantime, I’ve been drinking up the last of my store-bought stuff.  Another GT’s trilogy for this night.

    My daughter’s made kombucha before… freaked me out having the scoby around the house… but she said it was the best she’s had!! I hope you have the same experience!! I feel like you and my 33-year-old daughter could be fast friends!!

    I just bottled it today! It was WAY easy! I should have been doing this for years!!! Your daughter was way ahead of the game 😉
