Lunch break(down)

Well I finally had the breakdown we all knew was coming after last week…so now that that’s out of the way…

Lunch trend!

I prepped this so that my lunches would be taken care of and I legit had this days on end.

Until I ran out of dressing and then had to make do with my vegan Winter salad instead.

Avo and candied walnuts on a massaged bed of kale is mayyyybe the best plan B a girl could ask for.

This salmon and sushi was an impulse purchase that happened in my very sleep deprived and very emotional state and did not help fix anything. However, it did taste good. And now that I’m more rested and all my faculties are in working order, I can see that my coping skills that evening were definitely out of commish because of all that I had on my plate.

My intent in running to the store was to grab salmon and milk and nothing else. We needed milk for dairy dosing so going to the store was unavoidable. And since I had been sooooo exhausted, I did something I basically never do. I decided to treat myself (the family) to an expensive dinner that wasn’t on the meal plan. I was really craving salmon!

Buuuuuut apparently I was craving sushi too.

I was too weak to resist. Tired Elise is a mess, but exhausted and mentally taxed Elise is a whole other thing. I’m not going to share all the reasons why I was at such a low, but last week was for sure a low. Anyway, I’m back on the up and up now!

For the salmon, I sauteed it with sesame oil and tamari and then served it with an Asian cabbage slaw (which I was already planning on doing). Same meal as last week, basically.

I had a few rolls of sushi, too, but not much since I’d also made a rice/edamame dish.

In the end, I had lots of leftovers for lunch. Silver lining, right?

Raise your hand if you are ready for the rain to stop? MEEEEEE. And since I’m already making requests, can we also be done with temps in the 30s?? It’s almost March and I live in California for a reason (read: I’m a wuss).

    Oh man, i hope the stressful stuff is done and gone. I stop functioning as a human without enough sleep on a consistent basis and end up doing uncharacteristic stuff like locking mysekf out of my apartment and forgetting stuff (like leaving my wallet at home!). If buying a treat for dinner helps you cope then freaking do it!! It’s not like you were downing martinis to deal so something has to give. And awesome leftovers for lunch sounds like it all worked out well 😉

    Cut yourself some slack! It’s ok to treat yourself every once in a while. Especially when you’re stressed! Life is hard sometime so you might as well enjoy some of the perks when you get a chance 🙂
