Making things work

Since there was no school for P on Thursday (parent teacher conferences instead) I took the opportunity to make pancakes.  Cinnamon-y swirls!  I try to line up the days I make a big batch of pancake with days that we have extra time in the morning – be it later kiddo activities or no early morning workout for me (stroller strides instead).  I made this batch especially big because I needed breakfast for Kyle to feed the kids on Saturday because I was leaving the fam behind and going skiing.  I’ll get to that eventually, though.

P wanted to invent a yogurt flavor because he was perplexed about why orange yogurt doesn’t exist.  So I got a plain one for us to add marmalade to.  Success!  He might have Kyle’s entrepreneurial gene because as soon as he tried it he said “maybe we can make this and sell it!?”  We have been doing a lot of dosing with these Clover organic greek yogurts.  It’s a good way to bump up the protein without making him eat a ton of volume.  The whole tub has 12-13 grams of protein so when I split it in half he gets upwards of 6 grams.  When I don’t give him yogurt (or milk) I give him cheese (also in the 6-7 grams protein range).

Anyway, moving on to MY breakfast.  Still bored and uninspired with breakfast, I found these in the pantry and went for it.

Topped in cashew butter per usual.   It was fine, but I need to find something that makes me go YES in the morning.

Look at all those sweeties “adventuring” in the wild.  This was right before we lost them behind the trees for a few hours.  The independence at parks makes it so I can actually talk to my mom friends!

I really wanted my vegan Winter salad for lunch but didn’t have half the stuff prepped.  Ugh.  But then I remembered I had these in the freezer!

Not as good as roasted squash, but definitely great for times like this!  It totally worked!

Quiet time looks like this now.

I turned the train table into a craft/LEGO table and it’s been a huge success.  I also donated a TON of old toys that they don’t play with anymore so I could move all the art supplies into the toy room and they love it.  I still keep the paint and scissors and stuff in a separate place, but for the most part they have free range at all their stickers and coloring stuff and whatnot and it’s led to a huge surge in art work.  😉

Grandpa came to visit!

He took us out to Sellands for dinner and we ordered a ton of things to share 🙂

Dad’s picks: meatloaf and Shepherd’s pie.

Kyle’s pick: mac n cheese

Elises’s pick: carrot slaw (unique and surprisingly good!)

Kids’s pick: broccoli and bell peppers

Dad’s pick: cauliflower and chickpeas (ok, but not a wow dish)

Elise’s pick: mushroom chicken (because we got it last time and it was SO GOOD)

Everyone’s picks: almond chicken and teriyaki chicken (almond chicken was the star)

DIG IN PEOPLE!

It was so great to hang out with my dad and eat out with the kids.  As they grow up and can stay out later and eat whatever (thanks OIT!) it just makes things so much easier and fun.

We went to bed with TGIF on the brain.  Some weeks seem so much longer than others but that’s the name of the game with parenting, isn’t it now…
