Memorial Day Bite-lettes

Monday holiday!  Hooray!

IMG_2627

It took this many cups of coffee to get me moving this morning…

Ok, I realize this looks a bit like a scene from Intervention (before the person has recognized they have a problem).  BUT, in my defense, it was for both me and Kyle, and I often make extra (for PM iced coffees), so don’t judge.

IMG_2583

I frothed it up of course!

My breakfast wasn’t exactly traditional, but boy was it TASTY!

IMG_2618

I forgot to mention how effing amazing these BITE-LETTES were last night.  I would DEFINITELY recommend them.  I could barely control myself from eating the entire tub all at once!  They are like mini-oatmeal raisin cookies – and since they are ”wholesome” and vegan, I don’t feel bad about inhaling them like they would spontaneously combust mission impossible style if I didn’t…

IMG_2621

These cookies will self destruct in 5 seconds…

A little later I had a more complete meal to start the day off right.  ‘T’was divine 🙂

Since the weather was BEYOND fabeezy, Kyle and I decided to get our stroll on (whole life challenge – check).  After a few hours of adequately soaking up the sun multiplying our freckles, we returned to our hot stuffy apartment (AC time? I think so).  This east coast weather is very baffling to me.  I know I whine about it all the time, but it’s just so weird how one week it can be in the 30s and next thing I know, I’m sweating bullets in my paper thin scrubs…I mean, I haven’t even had time to put my umbrella away!  Probably because I’ll need it again a week from now…

But before this tangent gets outta hand, let’s get back to the food stuff.

Lunch.

IMG_2628

A few more falafel balls, WF tofu, chickpeas, and carrot “noodles.”  YUM!  I really love carrots.  And they are pretty sweet when shredded; a great pairing for savory WF goodies.

I had a few more bite-lettes with silk for lunch dessert.

IMG_2619

After lunch we went to pick up a new suit Kyle had on hold.  We meandered through Riverside Park on the way downtown (I packed a few pineapple rings for the road).

IMG_2629

Could this plastic bag BE any more recycled?  The foggy look is SO hot right now…

Seriously, it’s a good thing we moved apartments a couple of months ago, otherwise I would still be hanging on to bags from 2007, all in the name of being green.

IMG_2633

I was dragging when we got back home – enter iced coffee 🙂

And now, completely random and off topic…

Two things you may or may not have realized about me (1) I do not have naturally straight hair and (2) I am pretty freakin’ lazy when it comes to putting effort into my appearance (my platinum blonde Los Angeles days are far behind me, and not missed in the least).

So, that said, I may have discovered how I can use my inner slacker and still come out ahead.

IMG_2630

This is 4 day old unwashed hair.  Gross, you say?  Maybe.

I mean, sure, some of the details of my job aren’t so glamorous…(use your imagination), but I didn’t have any contact precaution patients over the weekend, I didn’t exercise or work up a sweat, AND (not that I have to justify this to anyone but myself) I was out late with co-workers on Saturday night, so I just didn’t get a chance to shower.  And yet, each day I woke up with straighter and straighter hair, which is pretty amazing for not even lifting a brush in over 72 hours!!!  I may be onto something here…

Are you guys AM or PM shower people?  I’m a night time girl for sure.  Especially on days I work, I like rinsing the “nasty” off after a long day, while minimizing my routine in the morning.  But then, I guess going to bed with wet hair explains why it takes me extra long to get ready in the AM – since I have an afro to tame when I wake.

IMG_2588

Back to the food.

I’ll admit, the main motivating factor in going to the gym today, was the shower after.

C’mon Elise, it’s been 3 days, suck it up and run so you can get clean.

I elliptical-ed for 60 minutes while zoning out to Kanye and the likes.

When I got home I threw some quinoa on the stove before hopping into the shower…

IMG_2635

When they were done, I tossed in some garbanzos

This is an idiot-proof meal.  So easy.  So delicious.

I ate most of it plain, but then decided to make a salad, too, so I added some into the salad.

IMG_2636

Spring lettuce, cherry tomatoes, baby carrots, quinoa, garbanzos, and raisins.

IMG_2638

Mmmm….

After dinner I decided to get down with Jon and Kate + 8.  Kyle and I did 6 loads of laundry, too.  It’s a good thing all I wear is scrubs and work out clothes (both of which I have in endless supply).

IMG_2617

For deezer, I had a few more oatmeal raisin bite-lettes, carobs chips and medjools dates.

IMG_2623

OK, I finished them.  How could I leave those last few though.  They were lonely, and I heard them calling my name…

PS I responded to all your comments at the end of my last post.

No judgement on coffee or bitelettes, but if you’re interested I often freeze those cookies so I don’t eat them all. Out of sight … and the melting time means I eat less. I love many of the flavors including the lemon. Oh yum.

Anyway, I like a shower in the morning to help wake me up, but notthing beats a shower right before bed. MMMM.

  2. jenngirl

Please, I could down a whole 12 cupper of coffee by my lonesome…well maybe. But I do drink a lot of coffee too!!

haha sometimes workouts are my motivation to shower, like just get a little bit dirtier, then you can shower 😉

  3. K from ksgoodeats

Your pot had me a little worried at first but then I realized that I brew mine up to 6 and that’s just for me in the morning. If you and I were ever together, we would need double pots just to satisfy our caffeine needs.

    That fruit plate is beautiful!

“Could this plastic bag BE any more recycled?” Could I BE wearing any more clothes?

Your hair is not gross at all, I totes understand! In my last post when I talked about my rats nest, I left out the fact that it hadn’t been washed in three days..shhh don’t tell anyone 😉

  4. Abby

Actually, you didn’t respond to my comment on the last post, so I’m under the assumption that Kyle does have four heads and fangs. Kidding.

Not food related, but onto the shower thing…I don’t have naturally curly hair; in fact I struggle with flatness (we’re talking about the hair here). I shower in the AM to wash my hair and go to work, but also just shower at night after the gym so I’m not gross(enter shower cap).

With my hair, it almost always “works” better in the morning for some reason (grease?) but I can never trust that I won’t wake up looking like I stuck my finger in a light socket, so I wash it in the AM to be safe.

And from this post, I now want cookies. Grrr…

  5. carolinebee

HAHA oh elise how i love you for posting a greasy pic rather than a, Oh HEY look how hot i look right now!!! pic. Whooo does that?!?? ;D

  6. Julie

    those cookies look SO good.
    must. find. them. now.

uhh IF it makes you feel better…I REALLLLY only wash my hair 2-3times a week. 3 on a good week. I got the keratin because without it I have a unmanageable horse mane so they tell you to wash your hair as infrequent as possible. lucky me haha. its a pain in the ass to wash it! so dont wash away girl!

  7. Low

HI! I’m a total HungryHungryHippie lurker. I love your blog! It’s great to read about someone in the healthcare profession. You are so productive and motivated even after long, grueling shifts. Amazing.

Anyways, I just had to comment because I totally just went 4 days without washing my hair too! I’d like to say it was a first, but it’s not. I just don’t wash it when I’m not going to see anyone or do anything to get it dirty, that’s me being green right? Haha, I usually shower in the morning and at night (super quick!) but only wash my hair in the mornings.

Those biteless looked irresistable. Their feelings would have been hurt if you hadn’t finished them.

  8. healthy ashley

Oh those cookie bites look so good!

And you are so pretty-even with unwashed hair!

  9. Maggie

Oh man, I want those bitelettes. There’s a similar thing at Costco, but I can’t buy them because I eat them all at once. Sad 🙁

I’m a morning shower person, but sometimes I shower at night too to get the gross off.

  10. Brooke

Hey, even if that was all your coffee, I wouldn’t be judgin’. Do whatchu want and like whatchu do!

I have naturally straight hair, which I praise my Jewish god everyday for, but it needs a washing everyday or else the grease compiles and makes me look like an SUV driving groupie sprayed my head at the gas station.

Where are those cookies from? Homegirl needs them to get her vegan eats on.

    YoU MaH GuRL!

  11. Heather McD (Heather Eats Almond Butter)

    Elise,
Back in my coffee drinking days (um, last week), I used to make the same amount of coffee every morning for me an Chris. So, no shame there, and I’ve only heard good things about those Bitelettes. I’m sure they would not last very long at our house either.

Showers are completely overrated in my opinion. I love my hair flat-ironed, but it takes me over an hour do it myself. So, whenever they style my hair at the salon, I will go 5 days without washing it…sweat or no sweat. When I do shower, it’s in the morning. 🙂

Loved your garbanzo bean quinoa salad. So simple, but sounds really delicious.

Hope you’re having a good night!

  12. Annabel

YUM where did you find those Bitelettes? I must check them out! I’m a morning shower person because, like you said, nite-time showers mean ‘fro control in the morning..and my hair can be quite the fro! Hope you had a great day!

  13. SuzanneRN

So #1… those oatmeal bites would have been gone in one sitting if I had them in my lap!

#2 I dont know why you can’t comment… hmmm.. I will look into that for ya!

    Ciao! 🙂

  14. elise

apparently there are tons of other coffee fiends out there! thanks for being such great enablers, guys!!!

heather – so smart! thats what ill do next time.

k – glad you caught that. heart chandler!

abby – grease must be the magic ingredient! haha.
four heads no, fangs, yes. i mean, he’s no edward cullen, but im not complainin’

c-bee – haha, love ya. i recall a couple glamour shots of you post workout as well…no shame in rockin the greasy ‘do right?!

low – thanks for de-lurking!!! so nice to “meet” you 🙂 you are too sweet. thanks for the kind comments. youre totally green. im all about the non-shower in the name of the environment! as for the bite-lettes – i agree, they would have been so sad to have been left behind! good thing i understand their feelings and willingly step up to the plate!

julie, brooke, and annabel – WHOLE FOODS!! get ’em now. but a word of caution, youll prob want to eat the entire container at once, they are SO good. you know the jingle for pringles “once you pop, you can’t stop”…yeah, its like that (good thing they are way “healthier” than chips) – i think?

  15. SuzanneRN

okay i think i figured it out! 🙂 comment away!

  16. lilveggiepatch

No judgment on the unwashed hair OR the coffee… just call yourself a European! And I agree, those Bite-lets are REALLY addicting. I’ve only had the banana chocolate chip, but they were amazing.

  17. Abby

I hope you didn’t take my comment the wrong way-I wasn’t really talking about what he looks like 🙂

(I was saying he could have four heads and fangs and the fact that he spoils you with such great food would still make him amazing!) You can never tell the tone with computers…grrr.

  18. burpandslurp

lol! you sure loved those bitelettes! I had the chance to sample them at WF, and boy, I had to refrain myself from getting seconds, and thirds, and forths! ok, so I totally got thirds. but that was it! I swear!
I’m def a PM shower girl…love to take a shower RIGHT before I go to sleep…it makes sleep so much better! plus, I wanna look clean and pretty in my dreams 🙂

  19. elise

haha, abby, you are too cute! dont fret my pet 🙂 as a HUGE fan of sarcasm – i can totally tell when you are throwin it back at me! i heart you, so keep the sassy comments coming!
