Fiesta Harvest Salad

The name for this came to me because (a) it’s a party in your mouth, (b) it’s tex mex inspired and (c) it’s featuring the ingredient of the season – BUTTERNUT SQUASH! If you think pumpkin is the ingredient of the season, then that’s fine, too. You do you, boo. But I’m allll about the butternut. The dressing was a lime vinaigrette that I made up. Lime vinaigrette Ingredients: 1/4 cup olive oil 1 tbsp lime juice 1 tbsp apple cider vinegar 2 tbsp mayonnaise 2 green onions, chopped 1/8 tsp chili powder salt and… Read more >

Taste the Nation

One of the best things about getting Hulu this summer was that we were able to watch Padma’s show Taste the Nation. We are all big Top Chef fans – we let the kids watch the most recent All Stars season with us – so of COURSE we wanted to watch Padma explore various cultures via their food and learn about their history. Such a great show for adults and kids alike. I also think exposing them like this sparks the desire to try all the things they are seeing. Which is how we came… Read more >

Trying something new

[This is an old post I just found in my drafts…oops!] For the first time in…hmm…maybe a year? I took a kid grocery shopping with me. The kids hate grocery shopping (who doesn’t) and so ever since they started school (you know, wayyyyy back in 2019 when school was in-person and I had some time to myself), I would go without them. Pantry items:-olive oil-canned coconut milk-canned tomatoes-curry powder-rice-canned chickpeas (optional) Freezer items:-frozen veggies (peas, zucchini, broccoli)-chicken breasts or thighs (optional) Anything else you may add is purely bonus – like onion, garlic, ginger, fresh veg. See? You could make this tonight!! First (if you have it/want it) chop a small onion, garlic, or ginger and saute in olive oil. Next add in one can each of coconut milk and diced tomatoes as well… Read more >

Breakfast lunch and dinner

More bread and butter. I guess all those acai bowls in Hawaii saturated my sweet tooth because lately all I am craving in the morning is salty butter. And another farro and kale salad with all the usual suspects – feta, candied walnuts, dried cranberries, etc. Plus lemon miso dressing. And carrots on the side. And a kombucha in the afternoon. Standard. It seems like the only variable in my menu is dinner! What can I say? I’m a creature of habit. When I find things I like, I tend to get in ruts and… Read more >
