My first plantain

I randomly decided I wanted to try plantains a few weeks ago and so I tracked one down (not hard actually…they’re at WFs) and then it sat in the fruit basket for over a week. I thought it would be good fried for breakfast, like a potato, since it’s a starchy kind of thing.  But I just never got around to it…and next thing I know it’s completely black and getting soft and (ack!) I needed to use it pronto. Thanks to the “paleo world” there are plenty of plantain breads and recipes and such… Read more >

Lots ‘o lunches and lots ‘o news

Remember back when I used to share daily meal log style posts with recaps of my entire day?  Man that seems so long ago.  It was a lot of work but I loved it.  I do miss it from time to time, but clearly life things happen.  Change and growth and all that jazz are to be expected, which, as it turns out, is reflected in my writing (both in style and approach).  I share my dinners and occasionally my breakfasts (thrilling as they are), but I sometimes forget about the middle of the day eats.  And that’s… Read more >

The weekly menu

Sorry for the late post…do you guys like seeing these family meal plans?  They’re my favorite posts that other people do because they give me good dinner ideas, so hopefully others feels the same.  I always bookmark the recipes I like as I browse blogs/websites throughout the week and then on Friday or Saturday go through them with Kyle and plan out next week’s eats.  I factor in weekly grocery sales and what he is craving, so I often don’t get around to all my saved recipes but that’s why pinterest exists, right?  I admit, I was… Read more >

Toddler cookies

My almost two year old just had his first real cookie.  And he was a BIG FAN.  No shock there. For some reason I told him I’d bake cookies while he was napping and he could have one once he woke up…who knows what got into me…I was feeling soft since it’s the weekend…but we’ve been doing some (pediatrician allergist approved) experimenting with allergens and I figured what kid doesn’t want to try a real cookie.  With real butter. To back up.  P is allergic to dairy.  We had it confirmed via a blood test… Read more >

Sweet and sticky beef

I don’t know how to say this, but I am not a big fan of beef, and yet I’m sharing a recipe with beef.  There are a few reasons for this, but the main one is that Kyle thought it was good, so I figured others (who like beef) would enjoy it as well.  Another big one is that it’s a pretty economical recipe because you can usually get stew meat for pretty cheap (or you can do what I do and wait for Whole Foods’ One Day Sales (on Fridays) which frequently offer the… Read more >
