Instant enchilada casserole

I have been promising Kyle enchiladas for so long now and I finally made good on my promise! Last summer our CSA was throwing peppers and tomatoes and tomatillos at me faster than I could even manage to process. I was so overwhelmed and had no clue what to do with them. Is there anything better than the pristinely smooth top of a new jar of nut butter?? 2020 may have a low bar, but the answer is still no any time you ask me. Back to school lunches?

Oh my goodness we are ALREADY back to packing lunches? I guess not really “packing”, since nobody is leaving. Here’s my strategy though…I am still going to create an at home lunch time/recess just like they would have at school. I am still going to pack them lunch boxes the night before, that they will then take outside with them for a pre-set amount of time. Tempeh and coping skills

Well, my kids still don’t like tempeh. So that’s a bummer. At least it means more for me and Kyle. I marinated the tempeh in a combo of olive oil/tamari/balsamic vinegar/salt/pepper in the pan for a couple of hours before I fried it. It absorbed all the marinade, so I added a little more olive oil before turning the stove on. I also added a little water a few times as it cooked so that it would broil and steam a bit and not burn. Meal planning department

Can I ask for something? I am so out of meal ideas!! Completely 100% out. So tell me what you’ve been making. ANY IDEAS ARE GOOD IDEAS PEOPLE. In the meantime I will share this meal, in which I combined chips, lettuce, tomatoes, black beans, cilantro, and ranch dressing with sautéed bell peppers and beef and it was a nice little taco salad. Thank you in advance for any help in the meal planning department.
