Since we are heading out of the country, I wanted to try a bunch of new foods before we left, to maximize the options for P. As you can probably imagine, I’m not really keen on the idea of trying various foods for the first time while we are oceans apart from our MD (and the coverage of health care). I am bringing 3 epi-pens with me and I’d like to return with the same amount. Benadryl can fill in the gaps if there’s cross contamination, but for the 2 weeks we are gone, I’m… Read more >

Swoon. We spent too much time at Lamps Plus last Sunday buying a chandelier for…drumroll…our new house!!! I am still in shock. More on that later. In the two hours it took to find a suitable chandelier and matching chain, P managed to pee through an outfit and get super hungry. Like a total rookie mom, I was prepared for neither. We left at 11:30 thinking it would be a 30 minute trip, tops. But we were way wrong. Needless to say I made it work. I changed him in the car and cleaned… Read more >

Sometimes Kyle has lunch meetings and sometimes he’s home for breakfast so what I pack for him varies. I just ask him about his schedule the night before and what meals he wants. Last week I made a bunch of breakfast burritos for Kyle. I assembled them and rolled them up in foil all at once so I could just throw them in his lunch box the night before. So easy. I am seriously sorry about the photos, but there’s only so much you can do with an iphone at 9 pm. For the… Read more >

We ran out of eggs before the end of the week but I refuse to ruin the budget by going to the store. I gave P the last two, scrambled with spinach, just like he likes them. Luckily I had one hard boiled egg left for me. I layered the slices atop avocado toast. We both had blueberries on the side. P had an entire zucchini muffin (cut into small bite sized pieces) with his eggs and blueberries. I used the same recipe as I did here only I bumped up the coconut aminos to… Read more >

Here’s the real indicator that I’m type A…I literally clean the blender parts and put them away before I drink my smoothie. Even when I’m a crazy hangrypants. Please tell me there are others out there who do this too? I know the OCD tendencies run deep in food bloggers, so I don’t think I’m going too out on a limb with this. But I definitely do it every. single. time. I make a smoothie. Other dishes, not so much. I’ll wait til after I eat breakfast to clean the frying pan (usually because I… Read more >
