One small step…

I finally got up the nerve to try feeding P coconut this week.    The first day I only used coconut oil when I fried his eggs.  Seemingly no reaction (his chapped face has been giving me false alarms all winter…it’s very stressful). The second day I tried coconut milk in a quinoa porridge.  He wasn’t a fan until I added banana and cinnamon, though, so he only ate a little. Week ‘o eats

The whole shebang of last week in one post.  Here goes. Breakfast on Monday was the last of this savory bread and fried eggs.   Breakfast on Tuesday was out – I had a savory crepe with hash browns at Crepeville. Because Crepeville’s portions are awesomely massive I had leftovers for breakfast on Wednesday.  Which I paired with two fried eggs. My highlights: week 1

Quiche is a weird word

I meant to make this with a crust, but when I opened this gluten free crust it was covered in mold.  Boo!   What the heck? I’m going to call this a fluke because I tried this crust before and loved it (minus the mold).  But this was definitely a bummer to open.  Since it was nap time I couldn’t do anything but go crust-less.  [Okay that’s a lie, I could have made my own crust, but I tried that and it didn’t work out.  Instead I wound up with pancake like biscuits.]    They… Read more >

Chocolate Dipped Coconut Macaroons

Kyle brought these home for me from work. Marc’s mom’s macaroons Ingredients: 4 egg whites 1 tbsp vanilla 1-2 tbsp sugar (to taste) 1/4 tsp salt 2 + 1/3 packets of TJ’s sweetened shredded coconut (each packet is 6 oz so ~14 oz total) [optional] bittersweet chocolate, melted Directions: Beat egg whites until soft peaks form, add salt, sugar, and vanilla.  Mix in 2 1/3 of coconut packet. Scoop into a medium spoon and press in. Put on baking sheet lined with parchment paper. Cook at 350 degrees F for 15-20 minutes. Coconut burns easily… Read more >
