Rationing but relishing

We still haven’t been to the store and Kyle and V comment on a daily basis that I’m somehow making the absolute 100% most awesome meals (to quote them). So that’s a nice little thing to hear considering my limitations. This should be a Top Chef challenge. A pantry with pepitas

Cabbage mighty cabbage! The green with the longest shelf life ever! I grabbed two heads of cabbage at the store before this whole shindig went down and look at us here, two weeks later, just getting around to using it because it lasts for-eh-ver. I should have gotten four heads! Ok, not really, because that’s hoarding (and you know by now that I am working very hard on not giving in to that). Oh hi delivery truck of my dreams! In times like this I am SO glad there are companies like imperfect foods to deliver food to your doorstep. Chia pudding parfaits

One of our afternoon activities was making chia pudding parfaits. I thought it was pretty genius considering it occupied them and resulted in them prepping their own breakfasts for the next day. Chia pudding parfaits for two Ingredients: 1/3 cup coconut milk (x2) 2 heaping tbsp chia seeds (x2) 1 tbsp maple syrup 1/4 tsp cinnamon 4-6 strawberries, chopped 1/2 cup blueberries [optional toppings] nut, seeds, shredded coconut I poured the coconut milk into a measuring glass for them, but had them each pour half into their own bowl. Salads and such

Here are some more meals to give you some inspo…or distract you from the news…whichever you need more right now. These are all from two weeks ago, before I did my last hurrah/shopping extravaganza. One gnocchi is barely enough, but two would be way too much. Dilemmas dilemmas… Since our veggies were limited, I used frozen shredded zucchini (I have one last bag in the freezer from last summer) and then I added Bitchin’ pesto sauce plus steamed cauli.
