That’s so last year

I’m all about renting cabins for New Year’s Eve (mellow setting, cheap booze, BYO food, super simple non-existent clean up…what’s not to love!?).  Usually we alternate between Lake Tahoe and Napa, but this year we changed it up. There are a few different ways to get to Clearlake.  We chose the wrong one.    Do you see those curves?!?  As someone who gets motion sickness very easily, this was a rather unpleasant drive.  We had to pull over a few times because I thought I was going to lose my lunch.  Not fun. Eventually we… Read more >

One Sauce, Three Ways

I have become obsessed with this sauce and I know you will too.   I’m not joking, I am putting it on every possible meal – and I’ve yet to find an ingredient it doesn’t enhance.  If that’s not enough of a teaser, I don’t know what is… So, I’ll just cut straight to the recipe.    Creamy Dijon Cashew Sauce *vegan, gluten-free, soy-free, no FODMAPS 3/4 cup raw cashews, soaked (at least 30 minutes) 1/2 cup water 1/4 cup nutritional yeast 1 tbsp stone ground mustard 1 tbsp honey mustard 1 tbsp apple cider… Read more >

Our daily oats

It’s true that I eat oatmeal almost every day.  I don’t think it’s boring, but that’s me.   I get questions rather frequently about how I make them…and while I never measure things as I go, I figured I should respond to the inquiries.  So last night, as I prepped for the work day, I got out the measuring cups and noted each and every step for you guys. Ready?   This is the basic framework.  3/4 cup dry whole rolled oats 2 tbsp chia seeds 1/4 cup raisins (no more or I risk overloading… Read more >

My faux Christmas

I realize it’s a new year and I am supposed to be looking forward or whatever, but I didn’t get to celebrate my holiday until the 30th…so excuse the delay.   After being on vacation for most of December, I went straight back to work through Christmas…and beyond.  Hospitals obviously don’t shut down because it’s Christmas (if only Santa could make that happen).  Fortunately, I am now back on the West Coast (holler!) which makes travel around the end of the year MUCH easier.  Driving up the coast vs. flying across the country?  No brainer. … Read more >

Adios Madrid

Our final day together in Spain was only partially spent in Madrid. To anyone considering a day trip to El Escorial – go!  It’s an easy excursion that’s interesting even if you’re not a history geek. We started at a non-Starbucks cafe (called Faborit) that actually had soy milk.  It was maybe 25 steps from the hotel lobby so we kinda felt like idiots for dismissing it the entire time.  Oops! Croissants. Cafe con soja. I was psyched to see a new city since I’d already been everywhere else we’d travelled thus far.  Plus, I… Read more >
