Easy veggie and quinoa egg bowl

In case you are searching for the simplest dinner idea ever, I’ve got you covered. EGGS! They are often forgotten in our house, but I was seriously scrounging when it came to me. I was so glad to have some veggies to roast because my next best option was making fried rice with frozen veggies. When you have nothing in the way of protein to add to a meal, eggs or frozen edamame are solid pinch hitters. To top it off I made a tahini sauce. The amounts are estimated below: 1/2 cup olive oil… Read more >

Overhyped pasta

I know this is not a popular opinion, but I don’t really love pasta. You probably know that since I don’t often share recipes with pasta. I’ve always been this way…maybe it has to do with the fact that I hated tomatoes growing up, so whenever my mom would make spaghetti or lasagna I was less than enthused. Kyle, on the other hand, LOVES pasta. He could eat it every single day, especially in comforting “homey” dishes with tomato and cheese. For that reason, I usually make him pasta for his lunches (shout out to… Read more >

The weekly menu

Three of this week’s meals were from the skinnytaste One & Done cookbook. The premise of the book is that it’s a bunch of one pot types of meals, grouped together into chapters by the appliance you would use to cook it. So there’s a chapter for the instant pot, there’s a chapter for the air fryer, there’s a chapter for the skillet, there’s a chapter for a sheet pan, etc. This salmon recipe was from the sheet pan section. Only I needed it to serve four (big eaters), rather than the two it was… Read more >

Always double it

Allow me to present my argument for always roasting extra veggies…. Behold! The quinoa tempo bowl (from my cookbook of the year Run Fast Cook Fast Eat Slow). It’s not too labor intensive to make on it’s own, but there are definitely a lot of parts to it. That said, busting out a quick 1-2 hours of prep on the weekend makes it totally reasonable to whip up on a weeknight. The main components are tempeh, roasted veggies, quinoa and a (DEEEELICIOUS) cashew ginger sauce. If you have the roasted veggies already made, you can… Read more >

Boozy bevvies

Soooo…apparently my new hobby is trying out different boozy drinks (seltzers, kombuchas, ciders, etc). I don’t really drink beer and wine at all anymore. I think I average one glass of wine a year. But now that I’ve discovered these fun guys I am quite smitten… The Health-Ade isn’t alcoholic, I just took a pic because I have been in a Health-Ade phase. It used to be rare for me to not have GT’s (or home-made) kombucha on a daily basis. Now my fridge is semi stocked with Health-Ade because I have been really into… Read more >
