Zucchini twice

This happens every summer… I have a million zucchini and not enough recipes. Luckily this year I have a new cookbook to help me out… Just like Ottolenghi’s other cookbooks, this one is full of hits. The best part about these recipes, though, is that they are quicker to make (hence the name – Simple)! How good does stuffed zucchini with pine nut salsa sound?! So good right. Well guess what. Kyle even agreed. Yes, you read that right. I convinced my pickle/cucumber/zucchini/dill hating husband to eat summer squash. Praise be!!! Talk about opening a… Read more >

Morgan’s blueberry U-pick

Last weekend we had one on one dates with the kids. I know I’ve mentioned that we do this every couple of months or so, but just in case you missed those posts, it’s nothing major. Just a half or full day of time where we split off into twosomes and enjoy the quality time. Last month I went mini golfing with P (followed by a sushi dinner date) while Kyle took V to the city pool. This time we swapped kids and Kyle took P to the zoo, while V and I went blueberry… Read more >

Chevre, fig and bacon quiche

If you happen to have fresh figs where you are, I highly recommend this recipe. I based it off of the fig n pig quiche from the Run Fast. Eat Slow. cookbook, which I don’t actually own, but rented from the library. [side note: prime day is coming up so start bookmarking your amazon wish list items now!] I made up a pie crust recipe and it turned out pretty nicely, but of course I measured nothing and will likely never be able to reproduce it. I’m going to write down approximations here so that… Read more >

Home is where the CSA is

I’m going to eventually get around to writing about the rest of our time in Idaho and Oregon later, but for now I just have too many gorgeous veggies to show off. First of all, we came home to a booming garden. We have tomatoes aplenty already. Not to mention there are fig and plum trees all around us, so on our way biking to and from parks we have been foraging them. Summer living! Figs are my ALL TIME favorite (so much so that my parents gave me a dwarf fig tree for my… Read more >

Oregon and Idaho I

Another June trip to Idaho in the books! This time we drove up to visit Kyle’s parents with a stop in Sunriver first. If you haven’t been, it is crazy beautiful. I highly recommend. We rented a place with another family and had the best time. Sunriver Brewing Company has a restaurant right in the heart of the village, and despite the wait being obnoxiously long, we still enjoyed it very much. After 8+ hours in the car we were all going a little loco, so it was good to have our friends arrive and… Read more >
