Palm Springs and Coconut Things

Everything but the kitchen sink oats.

Seriously, this bowl had SO many ingredients, it’s hard to remember them all.

  • oats
  • pumpkin puree
  • apple, chopped
  • frozen banana, sliced
  • So Delicious coconut milk
  • cinnamon
  • ginger
  • nutmeg
  • toasted cocoa nuts
  • Iced Gingerbread Clif bar, crumbled
  • coconut flakes

That must be some kind of record, right?

It required two refills.  Voluminous. 

Now, since Kyle and I are off to Palm Springs for the weekend, I’ll announce the winner of the Tropical Traditions coconut flake giveaway a few hours early.

When it comes to salads, oats, whatever, are you a the-more-the-merrier kind of person, or do you keep it simple?

Any Palm Springs/Palm Dessert recs?  Restaurants?  Spas?  Things to do or see?  We are pretty content to veg and do nothing…eat, drink, and lounge.

    ah, I love Palm Desert! we stayed at a gorgeous condo there for Coachella this year.

    I go overboard with my salads. but I don’t like to mix different ethnic flavors (yes, segregation lives in my salad bowl. I’m not proud but I’m not gonna lie about it!). like salsa or guacamole with hummus, or pesto, or ginger with, like, balsamic vinegar or something. hm, I sound pretty ridiculous, huh?

    abe and i had fun just walking around, exploring but we ate a very sad CPK so i obviously don’t know much about the food scene in palm springs!

    I’m definitely a fan of “kitchen sink” salads. I pretty much take everything I love–veggies, salsa, beans, etc.–and mix it all together into one huge concoction. Not so much for oatmeal, but I’m all about the junk salads! Enjoy Palm Springs!

    Wow, impressive! I’m sure that is a record of some sort!

    I am definitely a more the merrier type! I think of a bed of greens or a bowl of oats like a foundation rather than a focus and I love mixing warm and cold ingredients together!

    OMG, those oats look sooooo delicious! I have everything needed to make them except the Clif bar.

    Palm Springs? I love Palm Springs! One of my favorite vegan restaurants on the planet is there—Native Foods! I hope you get to go!

    I agree with Gloria! Native Foods serves incredible vegan food. Chef Tanya is amazing! I wish I was going to Palm Springs with you, just so I could eat there. But making myself a big bowl of oats this morning with everything but the kitchen sink sounds like pretty delicious consolation. Move over breakfast smoothie—it’s time for more serious eatin’! (Thank goodness there’s still some pumpkin puree and So Delicious coconut milk in the fridge!)

    The oats look wonderful. I tend to jam tons of ingredients into my salads and smoothies, but am more basic with oats oddly.

    I actually just wrote a post that have experimenting with so many ingredients, I find that simple banana oats with PB are the best!!
