The weekly menu

I am always soooo close to catching up and then I just don’t.  Okay.  Last weekend.  Hmmm…I’ve forgotten it completely…let me look at photos to refresh my memory.  Oh yeah!  Saturday we had swimming and then went to Farmer’s Market, per usual.

I was ravenous by the time we got downtown (after nursing and working out and swimming with P) so I double fisted it with a decaf soy misto and a gluten free baguette from Flour Chyld Bakery.

I also got another chocolate almond flour muffin to go (for a mid-week treat).

Kale lunch face.  Standard.  Eaten while lusting over the fun-but-over-the-top holiday products in the TJs flyer that I don’t let myself get.  Gluten free cranberry orange ricotta cake!?!

Then grocery shopping for the week.

No pics of Saturday’s dinner and I can’t even remember what it was.  Must have been memorable. Ha!

We got these samples while at Costco so that was (part of) my dessert.

Sunday was a mellow football day.  My fantasy team lost but I still made it into the playoffs so that’s a relief.  Important stuff people.

I baked this banana bread cake thing the night before and managed to only eat 1/4 of it per serving.  Meaning it lasted FOUR mornings (that’s pretty big for me).  Along with heaps of nut butter.

For lunch I had the last of the roasted root veggies with kale, cabbage, and nooch.

Along with it I had the rest of my baguette with Green Valley Organic lactose free cream cheese.

I haven’t made home-made crackers in a while week so I have been turning to Mary’s Gone crackers and Kettle brand potato chips (Thrive purchases what what) as my carb that I partner with my cruciferous bowl of greens.  Anyway, on Sunday I had the rest of the baguette from farmer’s market so…no brainer.

“al fresco” style meal for dinner because I was heading off to a concert on the earlier side of the evening.  Yup!  I did something social with my girlfriends and no babies!  Big step for me.  I was so happy the whole night long I kept thinking to myself “why don’t I do this more often!?!?”.  Now obviously I know the answer, but I did enjoy the glimpse into the future return of my social life.  One of these days Kyle and I will get up the confidence to get a babysitter.  One day…

For the record, we saw pink martini in the Mondavi Center and both the band and the venue were spectacular.  Seriously, it was the most fun.  Great music, great friends, great night.

For Monday I went meatless, again.  I made two quiches at the same time – one for us and one for a friend with a new baby.

It was a veggie quiche with mashed potatoes, broccoli, and mushrooms – which kinda ended up being like a cross between a tortilla española and a veggie pot pie.  Theirs had three cheeses while ours used vegan cheese.  Also, theirs had a crust and ours did not.

Smelled legit, and as soon as it cooled enough to wrap up, I threw the kids in the car to bring it over.

We finished ours off entirely between the three of us. 🙂  P was iffy on it.  Some bribery was involved in the form of dates.

Tuesday’s dinner, however, was a smashing hit for us all and P annihilated his serving and asked for more and more again.  There were grapes and bacon, so duh, but he actually ate the kale pieces before most of the other stuff.

My dad came on Wednesday and we spent the morning at the library and the afternoon at a friend’s house for a holiday party.

I baked mini muffins for the kiddos and used ingredients V had already cleared so she could have some too.

Banana, rice flour, whole rolled oats, chia seeds, maple syrup, salt and baking soda.  Nothing measured.  So far V has had almonds, soy and coconut without reactions, so that’s super exciting.  I will eventually do other things like eggs, but as far as other nuts, dairy, gluten and sesame go, I’m not in a rush.

I didn’t use much maple syrup so they were only barely sweetened beyond the natural sweetness of the banana, but the other kids seemed to enjoy them (and P and V both love them).

Glad I had extra bananas from being snack person at school on Monday because I definitely forgot to plan ahead and decided to make these about an hour before the party!

I also prepped dinner before we went (so I could stay as late as possible and not worry about coming home and making dinner).

Chicken apple sausage with broccoli and brown rice.  Easiest meal of all time.

OMG!!!!  Trader Joe’s dark chocolate tasting odyssey!  I am trying so hard to be a nice wife and share these but it’s really hard.  So far my favorite is the chili and cinnamon one which is a very surprising choice because normally I’d think the ginger and almond would be my life line.  I haven’t tried the orange hibiscus or the coffee and cocoa nib ones yet.

Kyle was working way late on Thursday so I ate alone with P.  We had roasted potatoes and carrots with ground beef which is definitely a weird dinner but I was trying to clean out the fridge and use things up before heading out of town the next day.

I had a mini loaf of chocolate almod flour banana bread from the freezer that lasted me two days.  And then I tried a new TJs full fat greek yogurt (CHOCOLATE MOUSSE!!!) that I couldn’t resist on our last shopping trip.

It royally destroyed my gut in a way that I haven’t experienced with greek yogurt ever before.  Within 10 minutes I felt sharp pangs and from then on it was just a waiting game.  So weird.  I rarely feel such immediate reactions with dairy – it’s usually a more drawn out bloated feeling that lasts a while.  This was a very acute reaction, though.  Sadly I guess I won’t get it again.

    Love the “rustic” crust on the gift quiche :))
    The mini muffins for the kids sound delicious! Glad to hear that V is so far so good with new allergen ingredients
    It’s possible I eat as many kale salads as you do- but yours always look better since good avocados are so easy to find in CA.
    Trader joe’s Greek yogurt-just the plain 2%- really didn’t agree with me, and I made myself try it a few times since it’s so cheap! I suspect there is just too much whey left in there which is why the texture is much thinner than Fage. But Fage is basically the only dairy product in my life now

    I suspect the same…I haven’t retried it yet but I did buy the maple flavored one at the same time so maybe I’ll muster up the courage again soon.

    Kyle is in a big kale salad phase right now so this week we planned more kale salad dinners so I get kale for BOTH meals. Happy me!
