Unbelievable

I forgot to share this earlier.  Look what I came home to yesterday!

Marinara tofu baked with veggies

Ummmm…my husband isn’t vegan or vegetarian, but he has been getting awfully friendly with the ‘fu.  I swear I had nothing to do with this dinner.  I was in complete shock when I got home from work and Kyle was digging into a block of tofu!  He was so proud of his creation that he had even taken photos with my camera!

Amazing.  He said there were a few changes he would make (like splitting it in half to bake as two smaller “steaks” as opposed to the one big block).

But I think it’s a pretty decent effort for a first attempt. 

Marinara tofu with peas and corn

Ingredients:

  • 1 block organic extra firm tofu
  • 3/4 cup 365 tomato basil marinara sauce
  • 1 tomato, chopped
  • 1/2 cup corn, frozen
  • 1/2 cup peas, frozen
  • Follow Your Heart vegan cheddar alternative
  • Garlic Gold garlic salt
  • Italian seasonings

Instructions:

Preheat oven to 400.  In greased pan, sprinkle tofu with Italian seasonings and garlic salt.  Add tofu to pan, pour tomato sauce on top.  Add frozen veggies and fresh tomato.  Top with vegan cheese.  Bake for 25-30 minutes.

Thinner tofu slabs would be preferable and only require a 25 minute cooking time.  Also, shredding the cheese would allow it to melt.

In any event, I think it’s pretty clear we are going to be cooking more plant-based meals for two…

    My boyfriend cooks for me from time to time, but I’m not holding my breath for a tofu steak any time soon ha. He’s just not there yet!

    What a nice surprise! 🙂 My boyfriends eats meat but he is willing to try new things that I make. I have really common food preferences with his siblings but not really anyone else in our families.

    That is so sweet your husband did that. My husband wouldn’t come near a block of tofu with an oven mit. P.S. I have the same picture of pancakes in a Paris Starbucks.

    Very impressive! Seth is not a vegetarian either, but fortunately he LOVES tofu. He actually asks me to make it for him on a regular basis.

    Hi: Just stumbled onto your blog and I’ve spent some time reading through various posts. I can relate- I have IBS as well, which has improved a lot since I’ve gone vegetarian. I still eat eggs and dairy without too much trouble but things are definitely better without meat in my life. I really loved the 2 posts I found from your trip to Paris; are there more? I also read the Disneyland advice; I live in Florida so I know what you mean. Disney World also has limited options, but it’s do-able. I have a little extra challenge since I can’t eat soy. Even the smallest amount of soy bothers me (not in an anaphylactic shock kind of way, just a lot of discomfort) so that’s fun to work around. (NOT.) It’s in EVERYTHING too, baked goods, wraps, anything processed, you name it, it’s likely to have soy in it. And just try to get the ingredients list for the actual bread product part of a restaurant sandwich; ha! But I digress. The main point is I like your blog and I plan to visit again! (But I’ll skip the soy recipes.) 😉

    PS Generally Tom and I share our evening meals, unless we both fancy something very different (me a big salad, Tom a big slab of meat). It’s rare that I have common preferences with any family members and friends when it comes to meals- pretty much everyone I know is majorly into meat or fish (esp. family-in-law). Nevermind. x

    hey elise! that tofu looks amazing, big thumbs up for Kyle making such a fantastic veggie dish 🙂 my bf and i eat quite similarly. tom is into vegetarianism for environmental reasons, and chooses not buy meat from big supermarket stores, ditto for fish, unless he caught it himself, on a one-off fishing trip or something. he’s kind of a hunter gatherer i guess! He eats a lot of dairy though. Me, I don’t eat any dairy, and do eat fish, but only from responsibly-fished sources if i can help it – i always check labelling 🙂 xyx

    Aww, that’s adorable! I would be scared for my life to eat any tofu (or much of anything, really) prepared by my SO. He’s no cook, and our dietary choices couldn’t be more different (I’m mostly vegan, and he’d subsist on a diet of hot wings, fried rice and Jarritos if I wasn’t trying to keep him from dying a slow, diabetic death). He will, however, eat absolutely anything, so we have vegan meals at home.
