We ran a race

My friend recommended this recipe for Thai coconut curry meatballs to me (I think she went to college with the blogger) and I added to the weekly menu asap.  

They were SO good!  Everyone was a fan.  I made rice to go with them, but served them over leftover spaghetti squash for myself. 

It felt weird to buy basil offseason, and I was half expecting to omit it thinking I wouldn’t be able to find it at the store, but I was wrong.  Plus, it was on sale! 

I swapped in a shallot for the onion for no real reason other than I already had one. 

There was basil in the meatballs but I added extra atop the adult bowls too. 

Good smells going on…

I used half turkey and half pork for the meatballs (because I couldn’t find a sausage similar enough to the one called for in the recipe).  I also think pork and turkey make a yummy combo because the pork helps them not dry out too much. 

Kiddo bowls were DEVOURED, curry sauce and all.  Lately my kids have been iffy on some of my meals…they are usually so adventurous and willing with their palates but they’ve been dragging meals out and I’m wondering if it’s just a phase or what.  I don’t usually change their meals from ours too much, aside from things like (less) cheese for P and/or less spice/heat for both of them…so I will just keep on keeping on, serving them sauces and dressings even when I’m not sure if they’l like them.  It beats the alternative of dumbing things down when I really want to give them the gift of having sophisticated and diverse palates.  All that is to say, I gave them a moderate amount of the curry sauce on the rice and they liked it. 

I highly recommend this recipe!  And browsing the rest of the recipes on this (new to me) website, I think there are a bunch more in my future. 


Friday finally rolled around and I did my stroller strides thing followed by this gorgeous lunch salad. 

So glad I made extra bacon wrapped dates 🙂

There was also kale massaged in balsamic vinaigrette, avo, and roasted butternut squash (leftover from our dinner date).  

I had no dinner plans, figuring I’d make something with stuff we have on hand, which is why we had gnocchi again.  🙂 I keep thinking people will get sick of this but nobody in the family cares at all.  I wanted something safe for my gut because the next morning we had a race to run! 

Due to the smoke sitch over Thanksgiving the Davis turkey trot got postponed until this past weekend…and while we weren’t signed up to run, a friend of mine was.  However she had a conflict with the new date and decided to transfer her race entry to me!  Which is how we ended up running a 10K with the stroller on Saturday morning.  

Wow oh wow it’s been a while since I covered that kind of distance!

Truth be told it was actually really awesome.  I am not in as good of shape as I once was (in terms of distance running) but I enjoyed it way more than I thought I would.  And the kids did great in the stroller listening to music and books on cd the entire time!  We started in the back of the pack because we had a stroller, but all we did all race long was pass pass pass pass people.  Over and over, passing people.  It sure pumped me up since we were one of the only strollers doing that distance.  

We all earned our medals 🙂

My usual pre-race meal is sushi, but I didn’t feel like spending money. 

Rather than thaw pesto from the freezer, I used the rest of the basil I had on hand from the Thai meatballs and made some fresh.  This batch had walnuts and pistachios.  SO GOOD. 

I added a littttttle pesto to the kids’ gnocchi and shrimp and they didn’t say anything, so I should have done more and not tiptoed around them.  I had a little pecorino romano with mine (the rest of the chunk shown). 

Plus some chocolate for good luck.  😛

This is the second flavor of Lucy Meifield chocolate that I’ve tried and it is just as amazing as the Guatemala flavor!  I’m so obsessed.  The “dark milk” is 60% cacao and such a beautiful balance of sweetness and depth.  

The texture is just like the Guatemala, substantial to bite into but still soft.  You guys need to get on this. 

Anyway, post race was the definition of mellow.  We did very little all day because we had big Sunday morning plans and we just wanted to kick our feet up after an hour of running.  

I made a strata for Kyle, which lasted him four days…and then made the same yummy kale salad as I had the day before for myself.

    I haven’t even attempted a race with our kids in the stroller! I love th basil comment. I’ve barely bought tomatoes since winter and my husband laughs when I complain about it. We have such first worldl problems, which is a good thing. I’m wanting a good salad so badly!

    Impressive!! That’s a long distance for running- and especially with a stroller!
    Those curry meatballs sound tasty, I’m thinking i could just make the sauce and use some meatless balls….
