What I Ate

This is a partial view because I missed some stuff, but it’s my main meals so that’s close enough.

First, I had coffee but I have no photo evidence.  I had one cup of decaf with Califia’s mocha almond milk in it.  After the kiddos were fed, I heated up the second half of my batch of waffles from last week.  With cashew butter on top.  Definitely in a cashew butter rut.

Full disclosure: I also went and got a Starbucks decaf soy misto after library before picking up P.

Once the kids were down for naps I made lunch.

I over-roasted some butternut squash but it’s all for me, so it doesn’t matter.  I’m not picky with my squash.  I massaged the kale with a home-made tamari almond butter miso ginger dressing.  It also had avocado, smoked almonds, and sesame seeds.

For those who asked, here’s the dressing I mentioned last week.

It’s SO GOOD.  Admittedly, the ingredient list isn’t perfect. But it isn’t terrible either, and sugar isn’t mentioned until the 6th ingredient, so I’m ok.

My two favorite store bought dressings are Brianna’s poppyseed dressing and this miso one. I hate buying things that are easy enough to make on my own (and therefore way healthier) but sometimes you just need a short cut.  Tell me your favorite store bought dressing!!  I still haven’t found a Caesar that’s totally my jam, but I welcome all recs.  🙂

I made this winter spa salad.

We all loved it.

And then Kyle and I got our dessert on while watching tv.

Two of my favorites!  I actually think that chocolate chai and almond bar is my all time #1 which is a HUGE statement.  I still have some left but since I bought half a case that’s not super impressive.  I’ve been trying really hard to ration, but you know, it’s chocolate.

    The Natural Directions Caesar dressing is my all-time fave. I believe they sell it at Nugget.
