Winter nuts

If I ever had to remove nuts from my diet I really don’t know if I could survive. I mean, I had to do it for a while back when P was allergic and I was nursing him so obviously I’m being a little dramatic here, but seriously, a year or so ago I tried to limit my nuts to one meal a day and even that was a struggle. So nowadays I just try not to eat the same nut more than once in a day. This is harder for me than it sounds, which as a real look into my diet. Especially considering the fact that I have multiple kinds of nuts for dessert on a regular basis. But for the most part, if I have almonds in my lunch salad, then I make sure dinner has walnuts instead. Or vice versa.

In this case, I saved allllllll my nuts for this meal, which had almond & pistachio pesto PLUS toasted walnuts on top.

So good.

The kids are coming (back) around on basil. Maybe they will peak just in time for summer. Oh man, I am already longing for summer and we are barely into winter. California is great and all, but it still gets to be in the 30s on a regular basis for these few months of the year and that’s just TOO COLD.

I finished off the last of my home-made marinara stash this past week, but I still have two more jars of my creamy tomato soup/vegan vodka sauce in the freezer, so our tomatoes days are numbered, but not entirely done…
