Back and forth

Here are the two salads I’m alternating between lately.

I’ve shown both before (plenty of times) but in case you were wondering what my lunches are looking like, I’m just over here buried beneath a pile of kale.

My vegan winter salad is apparently a year round salad now, that is unaffected by seasons.  I tried it with a vinaigrette made with champagne vinegar instead of red wine or balsamic and it wasn’t as good, so stick to the original recipe I gave you way back when.

BLISS.  You just have to be on top of it and prep over the weekends…roasting veggies, candying nuts, making dressing, washing and de-stemming kale.  You can do it!  I have faith in you!  Your health is worth it!

Am I a good cheerleader??  I wish I could food prep for a living.  I wish I could meal plan for all of you and cook for you and line your fridges with glasslock tupperware ready to go so you all had healthy options at your fingertips.  Is it weird that I find that fun and exciting?

Anyway, my second kale beast is a Caesar with sun dried tomatoes, hemp seeds, nutritional yeast, tessemae’s creamy dairy free Caesar (and occasionally chicken).

If I don’t use chicken I will sometimes add almonds, but it’s pretty good with just the hemp and nooch toppings.  You just can’t skimp on the sun dried tomatoes.  I’m talking a heaping 1/4 cup of the stuff with all the oily goodness it is marinating in.  Yummmmm…

It turns the creamy dressing a pale red which means you’ve really hit the ratio on the head.

All eaten in peace and quiet while naps and “quiet time” are going down…and then I get to work on planning our next activities…

I got this book from the library and it has a bunch of food related activities for kids, each pairing a children’s story that mentions a certain food with a craft and recipe that ties into the theme.  It’s so awesome!  Some of the recipes are things that I wouldn’t necessarily want to make for my kids, but I could swap in my own versions of the recipes easily and still use the idea.

    Yum! Both salads sound perfect, especially with the heatwave we have in NY right now. Just a heads up, tessemae’s Caesar dressing isn’t vegan-just dairy free. It contains eggs. I spotted it in WF last week and was excited to try it-alas the search for the perfect vegan Caesar dressing continues. Would love to know if you have any other recommendations!

    You ARE a good cheerleader! I totally make an enormous batch of massaged kale each weekend that i use for lunches and dinners- i almost made the vegan salad but just can’t deal with my oven so i swapped in those cooked beets from trader joe’s and hemp seeds since I can’t do whole nuts- it was really delicious!! Probably better with the candied nuts.
    Sounds like a fun book and cooking activity to do with the kids- they will be able to make their own breakfast or lunch before you know it! (My sister taught my nephew how to make his own scrambled eggs when he was 8, now he’s 10 and often makes eggs for both of them in the morning!)
