Bare basics

Are you ready for the basics?  I’m exhausted to a bare bones post is all I’ve got in me :(

Breakfast: Fruit & caf

Snack: Cinnamon raisin bagel submerged in Earth Balance

IMG_8986

And a mug of tea and crossword a la mode…

IMG_9016IMG_8985

Lunch: Everything-in-the-fridge salad

IMG_8995

  • spinach
  • edamame
  • shitake mushrooms
  • matchstick carrots
  • cherry tomatoes
  • corn
  • roasted red peppers
  • dried cranz
  • Bragg’s liquid aminos (A LOT!)

Snack: carrots & noochy hummus

Ok, for some random reason, this batch of Cedar’s hummus doesn’t have much going on in the flavor department…which is odd considering it’s my #1 brand (at the moment).  To fix this itty bitty problem, I added half a pound of nutritional yeast to the hummus, stirred it all up, and voila!  Lemons –> lemonade.

New product: High Country Goji Berry Kombucha

IMG_8997IMG_8998

I first saw this brand the other day on Jessie’s blog, and then just happened to stumble upon it in Whole Foods…divine intervention?  Sure.  I’ll take anything as a sign if it means I get to try Kombucha.  You all know how utterly obsessed I am with the Synergy brand, but I’ve never tried any others.  This one was on sale (2 for $5) so I figured why not?  The only flavors available were Original, Goji Berry, and Aloe (uh, weird?).  I’m a wuss and I have yet to try any OG flavors (I’m scurrrred), so I went with the Goji Berry.  It seemed like the safest way to go.

It was good.  Not as sweet as the Synergy flavors, but the subtle berry flavors were well balanced with the ginger/vinegar notes.

Dinner:  Land Thai Wok Vegetable Medley With Tofu

IMG_9008

Napa cabbage, snow pea, broccoli, tomato and tofu with a ginger-garlic sauce.

IMG_9009

Nothing to write home about.  It was good, but the portion was tiny, and I left the restaurant still hungry.

Dinner (#2): Whole wheat noodles with yuba

IMG_9011

Since Kyle and I were both not satisfied with our meals at Land Thai, we stopped on the way home for our “second course”.  I wanted to keep with the Thai theme, so I grabbed the (above) box and bulked it up with the (below) kale.

I love these Macro & Vegan prepared eats.  I hope this brand exists in CA, because they are so great in a pinch.  They sell bento boxes, noodles, dumplings, and a whole other variety of options and they are all vegan and macro…and delicious.

IMG_9014

I lightly steamed the kale first, then added in the noodles and stirred it all together.

IMG_9015

This was also my first time with yuba.  I had no idea what it was until I did a bit of research (it’s tofu skin).  The dish was a bit heavy on BOTH the oil and vinegar, but the kale helped even it out.

Dessert: One Lucky Duck raw oatmeal raisin cookies

IMG_8979IMG_8980

I was full, already, but there is ALWAYS room for dessert when O.L.D. goodies are present.

IMG_8981

I started out with 2 cookies, then immediately went back for 2 more…

IMG_8982

I. Could. Die.  One Lucky Duck desserts = happiness in my mouth

It was light and flavorful, not too sweet, and basically the perfect end to the day.

Sorry about my sporadic posting.  I’ll be back to a more regular blogging routine soon.

Question for ya – what do liquid aminos taste like??? I’ve thought about just buying a bottle, but I don’t want to invest in it not knowing what it tastes lik… is it like vinegar? Do you add anything else, or just the liquid aminos to your salad? Thanks for your help with this I’ve been perplexed for a while about this topic ;)

ok, its kinda hard to describe. its a bit like soy sauce, but not entirely. its salty. not vinegary though. i use Bragg’s alone on my salads. i am not huge on dressings to be honest, so if i use anything it is bragg’s, but most of the time they are dressing-less. its worth the $ – you can use it in so much stuff.

Back when I worked at VegNews, I was in charge of writing a kombucha taste test. Let me just say there are some heinous kombuchas. High Country, however, is pretty good. Synergy is still my fave, but that may be because I can find it regularly.

Duuuude, I need to try One Lucky Duck goodies! I never have!

Thanks for the link love – I’m glad you didn’t try the Aloe flavor, that sounds absolutely horrid. I will say that the original flavor of Synergy is pretty good, it tasted just like the gingerade one without the strong ginger taste – it’s still pretty sweet.

You intrigue me with your macrobiotic purchases, I don’t think I’ve ever delved into that kind of eating before.

Mmm. I had thai food on Friday night. Loves. Tofu Pad Thai and kabocha squash red curry. Amazing…and definitely filling. Hate leaving a restaurant still hungry!

When you come to Portland, you HAVE to try the local kombucha here from Townsends. You can get it bottled or they have it on tap at local Whole Foods. I’ve tried that brand you had before, but it was hibiscus & elderberry flavor. It was gross.
I hope you’re feeling better!
