BBQ Tempeh Potato salad

THIS WAS SO GOOD!  Pardon the cap locks but wowzers.  Emphasis necessary.

Normally I wait to share dinners with my weekly menu recaps, but I had to get this up asap because it needs to go on all your lists for next week’s meal plan.  Promise?

BBQ Tempeh Potato Salad [veg, gluten free, dairy free, nut free]

  • 10 red potatoes, diced
  • 1-2 tbsp olive oil
  • 1/2 red bell pepper
  • 1/2 pint cherry tomatoes, halved
  • 1 head romaine, chopped
  • 6 oz. Lightlife tempeh bacon*
  • 3/4 cup corn
  • 1 tbsp lime juice
  • 1/4 cup BBQ sauce
  • 1/4 cup mayo
  • salt & pepper to taste

First roast the potatoes.  Pre-heat oven to 350 degrees F.  Toss diced potatoes in olive oil and spread onto greased baking sheet.  Roast for 30-35 minutes until golden brown on top.

While the potatoes are cooking, combine bell peppers, tomatoes, corn and toss with lime juice, BBQ sauce, and mayo.

Add potatoes and tempeh and mix until everything is coated in sauce.

Chill until serving.  Add chopped romaine and toss just before serving.

*Notes: To make soy free, use black beans instead of tempeh and be sure mayo is soy free (canola oil based instead of soybean oil based).  Be sure tempeh is gluten free, if that’s necessary.  To make vegan, use vegan mayo.

I’d like to say this makes 4 servings, but Kyle and I both had seconds and finished the whole thing off.  Soooo…if portion sizes aren’t your thing (cough cough) then maybe double this for a larger group.  Otherwise it’s perfect for a party of two hungry adults.  🙂

I think this would make a good pot luck recipe too.

    This looks delicious! The only change I’ll make it to use actual bacon (and/or chicken cooked in bacon fat?) instead of tempeh. It’s seems like the perfect hot weather salad that can be an actual meal.

    Bookmarked this! I seem to have bbqs on the regular all summer that i need to bring something to (all my friends are omni and i have to be sure there is something more than crudites for me!) That lightlife tempeh is one of my favorites, awesome for avocado/tempeh/tomato sandwiches

    I loooove the lightlife bacon too. I am really tempted to retry soy with P soon…but after the dairy trial I am nervous. But man would that open up SO MANY doors for us. Ok, really any of his allergens would be awesome to overcome. Sigh. Patience Elise, patience.
