Egg and tofu wrap

At first I thought I just wanted a simple breakfast wrap.

Spinach, fried egg, Rudi’s GF tortilla.

But it looked a little sad (despite the absolutely perfect fried egg), so I took a fridge survey, and decided to make a mustard tofu salad too.

It had 1/4 block of extra firm tofu, dijon mustard, honey mustard, plain almond milk, and lemon juice.

It was a little bit runny, but I wasn’t too bothered by it.  Just meant more juicy goodness to wipe up with (extra) carbs afterwards.

I could hardly stand it’s perfection.  I had to pop the yolk.

Beauty.

Remember when I used to think yolks were gross?  It’s amazing how your taste buds can change.  And yet, I still turn to tofu all the time as an egg replacement.  I guess it’s proof you can like both and enjoy a diet that’s label free.  Unless healthy is a label.  In which case, I’m cool with it.

    I used to use tofu as an egg sub all the time! Then I realized the awesomeness of eggs. I don’t eat soy anymore because of my thyroid, so I guess it’s good I changed teams.
    I fully support a label-free diet!

    I eat meat, but i’m trying to eat more vegetables these days and try to have meatless meals once in a while
    I tried tofu for the first time yesterday. i was curious.
    i ended up frying it in a stir fry with veggies and quinoa. might’ve done it wrong 🙁
    the tofu was NASTY and the texture was awful, it reminded me of scorched scrambled eggs.
    and i love eggs!! so when it comes to rice bowls (hippie bowls :D) i like using eggs as my protein. and just eating eggs cooked in anyway possible. boiled is my favorite

    Both! Obviously, I only eat tofu, but I do love the taste of both. And I was all-runny-yolks all the time! 😉

    I used to love eggs (we even have our own hens!) but I’m intolerant and they mess me up like no other food. I’ve taken a liking to scrambled tofu, but meh. Chickpea flour makes a lovely, vaguely omelette-like pancake, too.

    I use to not like runny eggs either. Now I am a convert too. Over medium please! Tofu is just eh in my book. I like it much better when other people cook it. I can’t seem to get the hang off it, no matter what style I try.

    I have tried to like runny eggs but they seriously make me gag! My nearly 4 year old niece has recently become a runny egg lover and demands “yellow ketchup” with her toast on a daily basis. 🙂 I have been hesitant to jump on the tofu bandwagon. It just never looks appetizing or appealing to me when I come across it. Does it taste like it looks (rubbery)? For now, I’m an over hard egg fried in coconut oil girl.

    re tofu: its not rubbery, but its definitely got a specific taste and texture. i like it (and could eat it plain) but most people dont feel that way. given that, this is probably not the recipe for you. id avoid scramble-like/uncooked tofu dishes and instead stick with tofu thats been pressed and fried/sauteed in a sauce so it has a dense texture and the flavors have had time to bronze and penetrate.

    ok so what i do is crack an egg into a pan thats been already heated to high (and sprayed w non-stick or greased in some way).
    then i turn the heat all the way down to the lowest setting, cover it with a lid, and wait patiently.
    the lid is key because it cooks the top white portion ever so slightly so you dont ever have to flip the egg.
    once all the clear portion has turned white its ready to go.

    i was the same way and i really think the trick is pressing it for a really long time. when you remove all the liquid the texture is so much better (fried/baked/etc).

    That egg is gorgeous. I seriously love both eggs (especially runny yolks) and tofu. I am conflicted about eating eggs, so I only buy them about once a month now, but damn, a perfectly fried egg tastes like heaven and always elevates my energy.

    I’ve never been able to stand the smell or flavor of eggs. And I’m not a big fan of tofu. So, I think my answer is “neither”. But I have had a few dishes with tofu that I have liked. It had to be firm, and not squishy or bouncy, and has to have lots if flavor. I’m kinda picky about it I guess.

    Both, for sure. I even have em together sometimes…runny yolk over tofu stir fry, mmm. And yet I find that I really like baking vegan and using flax eggs in place of the real thing?

    The UK docs suggest avoiding runny eggs when pregnant. This makes me sad.

    This post inspired me to make a hardboiled egg and Tofu salad with honey mustard and paprika with spinch on top of whole wheat bread, perfection! Could not even tell that I was eating tofu. Thanks for the idea, I’ll try your version the next time I have extra tofu lying around.
