Empty Cannery

My day started with this cuteness.

I really can’t handle these pigtails.

I played around with these adorable blurry beings until breakfast because I decided to ride my bike to drop P off at school as a workout.  Freed up my morning for extra books and snuggles.  All good choices.

I had a mini cup of coffee and prepped dinner.  Crock pot for the win.

Yesterday at Costco I saw “pork sirloin tip roast” for a really good deal.  I’d never heard of this cut of meat, but a quick google reassured me it would be similar enough to pork butt that I could throw it in the slow cooker and end up with shredded pork bliss.  They are sold in 4 vacuum sealed packs, each with ~2 pounds of meat.  So I froze three and tried the first one out using a halved version of this nom nom paleo recipe for kalua pig.  Spoiler alert: it worked and tasted amazing. But we will get to dinner later.

Breakfast eaten in my bathroom while showering.  No joke.  After biking home from drop off I realized I had to haul a$$ to get to library with V on time.

Why is she freshly bathed you ask?  Oh don’t worry about it.  Hashtag potty training.  After lunch and the aforementioned episode we read books (they read them to each other and me) and then V napped and P had quiet time.  And I ate.

Yesssss.  I bought a bunch of these salads from TJs because whatever it’s going to be a long time without Kyle and so if I’m going to cook real food for my family for dinner then I’m going to have to cut corners elsewhere. And if that means buying pre-made salads I’m cool with it. They’re delicious, so it’s no real sacrifice 😉

Added avo and ditched the red onion per usual.  I meant to make crackers but never got time to prep them before Kyle left so I’ll have to squeeze that in some time this week.  I miss them!

Crock pot doing it’s thing.  I’m lucky that I have the 3-in-1 that can brown things in it before slow cooking them. That way I can sauté the bacon and sear the meat without dirtying another dish.  It’s the best – highly recommend.  After several hours I shredded it and let it continue to cook.

Mmmmm…looking all carnitas like…salty and delicious.

On the side we had lentil noodles and roasted broccoli.

They love reading to each other and “their babies”.

We went to the Cannery park after snacks.  For some reason it is always empty and it’s one of their favorites.  I like it because it’s new and has different stuff and they always seem to go off on their own and pretend play super well.  Also it has a nice bathroom.  Which we used 10 times in an hour’s span.

In case you forgot, she had a casted broken femur a week ago.  She has certainly forgotten.  I haven’t.  Heart attack heart attack heart attack.

There’s going to be a fine line I am forever navigating between being a helicopter mom and just letting them be kids.  Before, I was really laid back because I thought letting them learn their physical abilities was a key part of growing up. Which they have to do on their own!  But now I’m so nervous watching them from the side lines. The thing is, she hurt herself doing NOTHING remotely risky or complex.  So I can hardly stop them from just…jumping…on carpet…in our bedroom!  Kids are kids.  Even in a bubble she would have broken her leg doing what she was doing. So I guess I just have to wait for the PTSD to wear off and in the mean time bite my tongue.

    V’s pigtails are too cute! My little one used to like to wear clips, but now she violently shakes her head and fusses and pulls them out if I put them in her hair. I point out people wearing clips, we put clips on her stuffed animals….but she refuses to wear them. Her hair is getting long enough it is starting to go in her eyes and look messy all the time. Hopefully clips will make a return soon!

    these pigtails are very new for her so we will see how long they last. She is FINALLY getting enough hair.
