Foodie in the making

Originally, I was going to make this Thai roast chicken to add to these leftovers.  But then I ended up giving Kyle some of the noodles in his lunch so there weren’t enough left to feed the fam.  Oops!  It’s all good though, because now I have a small serving’s worth that I may just save for myself!

So instead I made an Asian slaw.

Kyle was SUCH A FAN of this meal.  And then kids ended up asking for seconds too, but it was already all gone!  Oops!

The slaw had one bag of green cabbage, one bag of mixed cabbage (red, green and shredded carrots), 1/2 cup roasted almond butter, 1/4 cup tamari, and 1 tbsp lime juice.  That’s it!  And because I made it earlier in the day, by the time dinner rolled around the slaw had time to wilt and get that good old flavor nirvana.  🙂

Meanwhile in chicken land, I cheated and cooked the thighs in the instant pot.  It was 100 degrees out, ok?

I did do a short burst in the broiler though, to try to get a little color on the top, but it didn’t matter because in the end, it was soooo tender I just decided to shred it and toss it in with the slaw…it was falling apart after hanging in the pressure cooker, why wouldn’t I???

Ooooooh baby was this a good one.

I added slivered almonds too and it was super filling.

Kyle declared this a favorite so I think it’ll be repeated often because when four people lick their plates, it gets marked down.

It had been a while since I made a recipe from Ready or Not, so I’m happy to have reignited the flame that burns deep in my heart for this book.  It’s one of Pacman’s favorites as well because (a) it has a lot of bacon recipes and (b) he loooooves looking at the step by step photos with each recipe.  Sometimes we read the cookbook together during his quiet time.  Foodie in the making.

    I just recently got the Nom Nom Paleo book from my husband for my birthday and I love it as well. I just wish she had a few more recipes that don’t have meat. I get it’s paleo, but still 🙂

    Yeah I know what you mean. It’s definitely meat centric.

    Sounds like a no brainer repeat meal! I’m insane so i bought a little head of cabbage to make slaw (because see previous re:insane I don’t like the shredded stuff in a bag) and i did a slaw with just a basic basalmic vinegrette and some thin sliced zucchini, it was so much better the next day!
    I have a bunch of cabbage left of course and everything to make that dressing that sounds awesome- definitely making this in the morning so it can sit a while. I’ll prob add some edamame or smoked tofu. Great summer meal!
