Birthday Blog Takeover #2

Hi, I’m Elise’s mom and have been meaning to represent the family on her blog for a while.  So in honor of her birthday, I decided was coerced to write a guest blog.

Elise’s dad and I have been healthy eaters for most of our lives, but there’s always room for improvement.  Since our daughters have all become lactose intolerant and have altered their diets in various ways, it has given me a reason to experiment more in my cooking.  And having a large vegetable garden in the backyard also helps get the creative juices flowing.

Our local paper had a recipe for a veggie burger that looked delicious, so I decided to give it a try.

The recipe is supposedly from the old Good Earth restaurant chain and it’s their Planet Burger.

Planet Burger Recipe

[Serves 8]

1/2 c. shelled sunflower seeds, oven toasted @ 350° for 5-7 mins.
16-oz. can garbanzo beans, drained and mashed
3 c. cooked brown rice
1 med. onion, chopped
1 med. carrot, shredded
1/2 c. Italian breadcrumbs
1/3 c. chopped fresh parsley
2 eggs, lightly beaten
1/4 c. soy sauce (low sodium)
1 tsp. dried thyme
Vegetable oil for cooking

Combine all ingredients except oil.  Form into eight patties.  Pan fry in oil in large skillet over medium heat until thoroughly heated, about four minutes per side.  Serve on French bread with condiments.

I didn’t follow the directions they gave for the sunflower seed roasting, since I had purchased roasted sunflower seeds.

I combined the burger ingredients in a bowl and then formed the patties.  It was a bit of a challenge to get them to stick together, but I made it work.  I fried them as the recipe described, but I think it might have been easier to bake them on a cookie sheet, since it was a little hard to flip the burgers.

They held together well enough to make it to the bun, and that’s what’s important.  We had great tomatoes and avocados to add to the burgers, so they were delicious.

Elise is better at taking photos of her food than I am.  I was so hungry by the time the burgers were ready that I failed to focus!

Give these burgers a try.  They’re really good.

    Tell your Mom that the planet burger was my all time favorite at the good earth restaurant in Los Gatos, CA. The burgers fell apart when I ate them. It was sure worth the mess.

    isnt that burger the best!!! i cant ever order anything else because im afraid it just wont stand up to the yum that is the plant burger. they should open more locations…preferably one here in so cal.
