Birthday Blog Takeover #3

And now, for the next guest post in the birthday series…

My youngest sister, Marie!

As a 23 year old who has only lived on my own for a few months my ‘cooking’ has seen better days. TJ’s frozen dinners have been my best friend so when Kyle asked me to do this guest post for Elise’s birthday I said YES…oh wait, does that mean I actually have to cook?

The way my dinners are made these days are in increments. I make one part, eat it, sit, watch tv, then if (meaning when) I’m still hungry I get up and make part 2…3..4…5…  🙂 I can’t decide if with this method I eat more or less?

PART 1

I began by marinating the organic chicken that I bought from Costco.  The marinade was made up of white wine, balsamic dressing, garlic powder, salt, and pepper.  I let it sit for about an hour while I made the other parts of the meal.

Part 1 was a delicious soup that yes; I bought from the store (I’m 23, give me a break!) It’s the first time I’ve bought soup from Safeway and I must say, I was quite impressed! It was organic tomato soup and it was yum yum yum. In an attempt to make it somewhat homemade I sliced up pieces of wheat bread and baked them until crispy (ie kinda burnt) in the oven and then put them on top to be soaked up by the soup!

PART 2

My current obsession is roasted cherry tomatoes. I follow in the footsteps on my sister in the fact that I don’t do moderation well.  This item has become a staple in my diet and I tend to make it multiple times a week…but HEY, they are tomatoes, so at least its good for you!  All I do is take some cherry tomatoes and add some EVOO and salt! Bake them until the tomatoes burst and the delicious tomatoes gush and the olive oil mix together into heaven!

PART 3

Before sitting down to eat the roasted tomatoes I took the chicken out of the marinade and popped it in the oven to cook while I ate part 2 of my dinner.  The chicken took about 30 minutes and was still super moist! (Sorry Laura, I know you hate that word, hopefully you are too busy traveling to read this!!) Come part 3 I was feeling even lazier than normal and instead of making some kind of rice to put the chicken on, I just eat the breast as is. And as is, is GOOD!

Nothing fancy, definitely nothing difficult, but it kept me full and away from snacking so I’m calling it a success!!  HAPPY BIRTHDAY ELISE!!!!!!

    lol I’m 23 too (okay, 24 in less than a week) and I’ve learned (okay… LEARNING) to cook! Although the chicken is good! I’m still scared to cook chicken…

    Aw yay thanks guys, makes me feel better about the nights when there is def a lack of cooking going on in the kitchen! But do try the roasted tomatoes- you WONT be disappointed! 🙂
